Cappuccino Flats Recipe: How to Make It image

These coffee-flavored cookies are so delicious they make my own kitchen seen like a gourmet bakery!

Yield 4-1/2 dozen.

Number Of Ingredients 14

1/2 cup butter, softened
1/2 cup shortening
1/2 cup sugar
1/2 cup packed brown sugar
1 tablespoon instant coffee granules
1 teaspoon warm water
1 large egg
2 ounces unsweetened chocolate, melted and cooled
2 cups all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
GLAZE:
1-1/2 cups semisweet chocolate chips
3 tablespoons shortening

Steps:

  • In a large bowl, cream butter, shortening and sugars until light and fluffy. Dissolve coffee in water; add to creamed mixture with egg and melted chocolate until blended. Combine the flour, cinnamon and salt; gradually add to creamed mixture and mix well (dough will be sticky). Shape into two 6-1/2-in. rolls; wrap each in plastic. Refrigerate for 4 hours or until firm. , Unwrap and cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 10-12 minutes or until firm. Remove to wire racks to cool completely., In a microwave, melt chocolate chips and shortening; stir until smooth. Dip each cookie halfway in chocolate; allow excess to drip off. Place on waxed paper; let stand until set.

1 teaspoon instant espresso powder
1 teaspoon vanilla extract
1 cup butter, softened
1/2 cup confectioners' sugar
2-1/4 cups all-purpose flour
1 tablespoon baking cocoa
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
GLAZE:
2 cups confectioners' sugar
1/4 cup cold brewed coffee
4 teaspoons butter, melted
1/4 teaspoon ground cinnamon
30 chocolate-covered coffee beans

Steps:

  • In a small bowl, dissolve espresso powder in vanilla., In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in vanilla mixture. Combine the flour, cocoa, salt and cinnamon; gradually add to creamed mixture and mix well. Cover and refrigerate for 30 minutes or until easy to handle., Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets; flatten slightly. Bake at 400° for 7-9 minutes or until set. Remove to wire racks to cool completely., In a small bowl, combine the confectioners' sugar, coffee, butter and cinnamon. Dip each cookie in coffee mixture; allow excess to drip off. Place on a waxed paper-lined baking sheet and top with a coffee bean. Chill until set.
