Raw lotus root mixed recipe - Simple Chinese Food image

Lost appetite in the hot summer day. It's perfect to mix with a cold dish. The color is bright red, slightly spicy and salty, very appetizing.

Total Time 10 minutes

Number Of Ingredients 8

1 section Lotus root
Scallion white section 1 section Green onions
Ripe white sesame seeds White sesame
20 grams Rapeseed oil
30g Pixian Doubanjiang
3 grams Sugar
2 grams Chicken noodles
10gram sesame oil

Steps:

  • Prepare materials. Shred the green onion.
  • Wash lotus root, peel and slice. Soak in clean water for a while to remove starch.
  • Boil water in a pot and blanch the lotus root slices until they are broken.
  • The blanched lotus root slices are soaked in ice water to wash away the mucus on the surface, which can make the lotus root taste brittle.
  • Pour rapeseed oil into the wok and heat it up,
  • Add Pixian bean paste and stir-fry on low heat
  • Until the oil is red and bright, the fragrance is overflowing.
  • Add sugar, chicken powder, and sesame oil to the bean paste, mix well, let cool and set aside.
  • Put the lotus root slices in a bowl to control the moisture, add green onion shreds, drizzle with cold bean paste, and mix well. Sprinkle with white sesame seeds.
