1 1/3 lbs cod fish fillets
lemon juice
salt and pepper
4 tablespoons cajun spices
butter
sour cream

Steps:

  • Drizzle cod fillets with lemon juice.
  • Salt and pepper to taste.
  • Rub fillets with cajun spices and coat well.
  • In very hot skillet, cook fillets in butter for 4 minutes on each side.
  • Remove from skillet and serve immediately.
  • Serve with sour cream, carrot and zucchini cut into julienne.
  • Garnish with fresh parsley or dill.

Delicious spicy cod served with creamy sweet potato mash served with broccoli

Steps:

  • Spread the cajun spice on a plate and cover both sides of the cod fillets. Cut the sweet potato into chunks and cover with water, boil until soft; be careful not too overcook as they can turn brown.
  • once the potato has cooked mash with butter and season. i cooked the broccoli in a pan of hot water for about 5 minutes until just tender.
  • When your broccoli is about halfway heat the olive oil in the pan, add the ginger so it starts to soften and season the pan. Add the fillets and cook on each side for about 2 minutes, turn carefully as they become quite soft. When cooked serve with a scattering of the spring onions.

  • Preheat your grill to medium high. Pat the cod dry with a paper towel. Sprinkle with the Cajun seasoning and sea salt and let stand 30 minutes at room temperature. Make 4 tinfoil packets by place two pieces of tinfoil on top of each other, placing one cod in the center of each. Drizzle each fillet with 1 tsp of olive oil and close the packets very tightly. Place the packets on the grill, folded side up, and grill until the fish is opaque and flaky, about 5-10 minutes depending on the size and thickness of the fillet. Once cooked, set aside to rest and cool for 5 minutes. While the fish cools, mix all the slaw ingredients, up to the parsley in a large bowl. Stir in the parsley. Add in the vegetables and stir until they’re well coated. Serve the slaw over the cod and DEVOUR!
