A popular Spanish coffee drink, often served at breakfast. The proportions should be equal quantities milk and strong coffee. The ingredients and instructions include making the coffee with a French press, but you can substitute any very strong brewed coffee or espresso. I wouldn't recommend instant coffee or decaf as neither would likely be strong enough. The scalded milk will be sweeter than fresh milk, so keep that in mind when adding sugar. 2/3 cup fresh ground coffee (use a darker roast, such as French roast, for best results)
2 cups boiling water
2 cups whole milk or 2 cups 2% low-fat milk
sugar
ground cinnamon (garnish) (optional)

Steps:

  • Place coffee in bottom of prewarmed French press. Add boiling water, replace lid (without lowering filter), and allow to brew for 5 minutes.
  • Meanwhile, place milk in a small saucepan. Bring just to boiling point (the first larger bubble breaking on surface), then reduce heat to barely simmering. Simmer gently for a few minutes, stirring occasionally, until coffee is done.
  • After the 5 minutes are up, depress plunger on press to strain grounds. Divide coffee evenly between 4 mugs. Add hot milk to each cup in equal amounts to coffee.
  • Sweeten to taste. Garnish with a dash of cinnamon, if desired.

Served in cafes throughout Spain, this coffee and milk drink is simpler to make than a latte because the milk is steamed instead of frothed.

1 cup whole or 2% milk
1 cup hot, strong dark-roast coffee, such as French roast (see Tips)
2 teaspoon sugar (optional)

Steps:

  • Place milk in a small pan over the stove. Heat just until about to boil, when tiny bubbles are gathering around the edges of the milk. Remove from heat.
  • Divide the hot, fresh-brewed coffee between two small coffee or espresso cups. Swirl milk in the pan to even out the heat and bubbles, then pour the milk evenly over the coffee in the two cups.
  • Serve immediately with sugar and small spoon on the side.
  • Cuban version: Add sugar to the milk as the milk is steaming over the stove and stir to combine. One method is to pour the sweetened milk over the hot coffee in the cups, another is to add the coffee back into the sweetened milk on the stove and continue to steam and blend the mixture another minute or two before pouring into the cups.
