GERMAN BRATWURST HOT DOG WITH RED CABBAGE SAUERKRAUT



German Bratwurst hot dog with red cabbage sauerkraut image

4 Bratwurst sausages
2 tbsp olive oil
1 tsp caraway seeds
1 red onion (halved, thinly sliced)
½ red cabbage (core removed, leaves shredded)
4 tbsp apple cider vinegar
1 tbsp roughly chopped parsley leaves
mild English mustard (to serve)

Steps:

  • To make sauerkraut, heat 1 tbsp oil in a large pan over medium heat. Add caraway seeds and cook, stirring, for 1 minute or until fragrant. Add onion and cabbage, and cook, stirring, for 5 minutes or until cabbage starts to wilt. Add 2 tbsp vinegar and cook for a further 4 minutes, then cool for 15 minutes.
  • Meanwhile, preheat grill to medium. Cook sausages, turning regularly, for 12 minutes or until browned and cooked through.
  • Combine remaining 2 tbsp vinegar with remaining 1 tbsp oil. Stir into cabbage mixture, along with parsley, then season with salt and pepper. Serve bratwurst in a roll, with sauerkraut and mustard.

1-pound bag sauerkraut, drained and rinsed

apple cider vinegar

sweet pickle relish

 small stalk celery, finely chopped

scallion, finely chopped

1 tbsp.

finely chopped pickled jalapen~os

Vegetable oil, for the grill

links fresh bratwurst

hot dogs

salted butter, softened

split-top hot dog buns

Yellow mustard, for serving

Steps:

  • For the sauerkraut: Heat the olive oil in a medium saucepan over medium heat. Add the onion and cook, stirring occasionally, until just tender, about 5 minutes. Add the caraway and mustard seeds and stir to combine. Add the sauerkraut, vinegar and 1/2 cup water and bring to a simmer. Cook, stirring a few times, until the liquid is almost gone, about 10 minutes; set aside. For the relish: Stir together the relish, celery, scallion and pickled jalapen~os in a small bowl. Cover and refrigerate until ready to serve. For the hot dogs and bratwurst: Preheat a grill to medium and oil the grates. Grill the bratwurst, turning occasionally, until marked and cooked through, 8 to 9 minutes. Grill the hot dogs, turning occasionally, until marked and heated through, 4 to 5 minutes. Lightly butter the buns, then toast on the grill, about 1 minute per side. Serve the hot dogs and bratwurst in the buns and top with mustard, the sauerkraut and relish.
