Love ribs in alot of different ways. This prep is easy and fast. This recipe comes from a well worn copy of Gloria Bley Miller's THE THOUSAND RECIPE CHINESE COOKBOOK.

2 lbs pork spareribs
1/4 cup soy sauce
1/2 cup pineapple juice
1/4 cup sugar
1/4 cup rice vinegar
1/2 cup water
2 tablespoons oil
1 tablespoon flour
1/2 teaspoon salt
1 cup canned pineapple chunk
1 tablespoon cornstarch
3 tablespoons water

Steps:

  • Cut ribs apart; then with a cleaver, chop each, bone and all, in 2 inch sections. Add soy sauce and toss. Let stand 45 minutes, turning occasionally. Drain, discarding sauce.
  • Drain pineapple, reserving juice. Combine juice with sugar, vinegar and water.
  • Heat oil in heavy pan or wok. Add ribs and stir-fry to brown (3 to 4 minutes).
  • Stir in flour, then pineapple juice mixture. Heat quickly, then simmer, covered, until ribs are tender (about 45 minutes).
  • Add salt and canned pineapple chunks, stirring in gently only to heat through.
  • Meanwhile blend cornstarch and cold water to a paste, then stir in to thicken. Serve hot.

Sichuan style braised ribs and potatoes. Serving with noodles

800 g ribs
2 slices of ginger
4 scallions ( ,divided)
2 tbsp. cooking oil
2 tbsp. doubanjiang
1 tbsp. douchi ( ,fermented black beans)
10 slices of ginger
1 tbsp. minced garlic
1 tbsp. light soy sauce
1 tbsp. Chinese cooking wine ( ,Shaoxing wine)
1 tsp. rock sugar
2 star anises
2 to 3 serving noodles
salt and pepper

Steps:

  • Place the ribs in a deep pot with enough water to cover. Add scallion in. Bring to a boiling and then cook for 1-2 minutes. Transfer out and clean with warm water. Drain and set aside.
  • Prepare a clay pot or stew pot, add around 2 tablespoons of oil and fry doubanjiang over slow fire until the oil turns slightly red. This is a very important step to remove the raw taste from doubanjiang.
  • Add ginger, garlic and fermented black beans.
  • Add the ribs in and let them stay for a while until slightly browned. Add light soy sauce, cooking wine, sugar, star anise and scallion and fry for another 1-2 minutes.
  • Pour enough warm water and add small potatoes in. Cover the lid and simmer for 20 minutes until the potatoes are well softened. Uncover and continue cooking for 10 minutes until the sauce is reduced to 1/3 again.
  • Cook noodles according to the instructions. Add around 1/2 cup of water for cooking the noodles and a small pinch of salt and pepper in each serving bowl. Transfer the noodles in.
  • Scoop braised ribs along with the juice.
