1 pound small new potatoes
1 head garlic, halved crosswise
1 bay leaf
1 teaspoon black peppercorns
Kosher salt
2 to 4 tablespoons unsalted butter
Freshly ground black pepper

Steps:

  • Put the potatoes, garlic, bay leaf, and peppercorns in a large saucepan, add cold water to cover by about an inch and season generously with salt,. Bring to a boil, lower the heat, and simmer until potatoes are fork tender, about 5 to 8 minutes depending on their size.
  • Drain and discard the garlic, bay leaves, and peppercorns. Halve the potatoes, if large, toss with the butter and season with salt, and pepper, to taste. Keep warm.

Yellow, red bliss, or russet potatoes

Kosher salt

Steps:

  • Scrub potatoes clean. If you're making potato salad or mashed potatoes, cut potatoes into evenly-sized large chunks.  Add potatoes to a large pot then pour over enough water to cover potatoes by 1". Season with a teaspoon of salt per pound of potatoes. Bring water to a boil over high heat, then reduce heat to medium and cook at rapid simmer until potatoes are easily pierced with a paring knife, about 10 minutes for chopped potatoes and 20 minutes for whole potatoes.  Drain potatoes in a colander.
