Louisiana Crawfish Boil Recipe | Allrecipes image

What a feast! Invite the family and dig into this messy, yummy boil. Combining crawfish, sausage, corn, mushrooms, potatoes, and artichokes, this is a dish you'll crave over and over. Add other seafood or vegetables to your liking.

2 heads garlic, unpeeled
5 bay leaves
2 (3 ounce) packages dry crab boil
1 tablespoon liquid shrimp and crab boil seasoning
salt and pepper to taste
3 large oranges, halved
3 large lemons, halved
2 large whole artichokes
15 red potatoes, washed
30 pieces baby corn
2 large onions, sliced
2 (16 ounce) packages mushrooms, cleaned
½ pound fresh green beans, trimmed
2 (16 ounce) packages smoked sausage, cut into 1/2 inch slices
50 live crawfish, rinsed

Steps:

  • Fill a very large pot about 1/3 full with water. Add the garlic, bay leaves, dry and liquid crab boil seasonings, salt, pepper, oranges, lemons, artichokes, and potatoes. Bring to a boil over high heat, then reduce to a simmer, and cook for 20 minutes.
  • Stir in the corn, onions, mushrooms, and green beans; cook 15 minutes more. Stir in the sausage; cook 5 minutes more. Add the crawfish, return mixture to boil, then simmer until the crawfish shells turn bright red and the tails pull out easily, about 5 minutes. Test for doneness by peeling a crawfish. Be sure not to overcook, or crawfish will become tough.
  • Drain well. Serve crawfish hot, Louisiana-style, spread over a picnic table covered with newspapers.

This recipe makes tasty and incredibly simple to make chicken and dumlings with a velvety sauce. It's so good, you will want to make them often!

Number Of Ingredients 12

2 c. flour
½ t. baking powder
1/4 t. salt, divided
6 T. butter
1 cup milk, (a little less)
2 qt. chicken stock
1 T. onion powder
2 T. ground black pepper
2 bay leaves
garlic powder, to taste
poultry seasoning, to taste
3 c. cooked chicken, rotisserie is good

Steps:

  • Combine flour, baking powder and 1/8 t. salt in a bowl. Cut butter into the dry ingredients with a fork or pastry blender. Stir in milk, mixing with a fork until the dough forms a ball. Heavily flour a work surface.Use rolling pin or a pizza cutter to cut the dumplings. Use a small spatula to lift the dumplings off the cutting surface. Roll dough out thin with a heavily floured rolling pin. Dip cutter in flour and cut the dumplings in squares about 2 inches x 2 inches. Use a floured spatula to put dumplings on a heavily floured plate. Just keep flouring between the layers of dumplings. To cook, bring stock to a boil. Add in seasonings plus the remaining salt. Drop dumplings in one at a time, stirring as you add them. The extra flour on them will help thicken the stock. Cook for about 15-20 minutes or until they not doughy tasting. Add the cooked chicken to the pot. Serve 8.

  • NOTES: I use the biggest pot I own (I think it's about 5qt) for this recipe. The chicken alone needs to get covered with the water to begin with and after that, the dumplings add some height to it. So my large pot is big enough for it all, thankfully. You can use a whole chicken (like I do, since that's what I grew up seeing and doing) or you can use boneless pieces like the breasts, legs, thighs, or whatever parts you want. If you don't use a whole chicken, I'd suggest using the skinless pieces since it's easier to just rip apart and throw in the part without having to deal with skinning it as well. I don't normally put any vegetables in it besides the onion, but when I do, I normally throw in carrots (shredded, julienne, or chopped) and celery for some added nutrients. It's completely up to you though! You can probably added corn, green beans, broccoli, etc in it if you really wanted to. Thanks for all the comments! I read each and every one of them and all the great feedback makes me want to create more recipes and even share any family recipes I come across! <3

  • In a stockpot or Dutch oven, combine first seven ingredients. Bring to a boil; skim foam from broth. Reduce heat; cover and simmer until chicken is tender, about 1-1/2 hours.
