Preparing homemade biscuits (or cookies) is a simple, delicious and economical option for breakfast or as a snack. Although traditional recipes use sugar to make biscuits, sugar-free alternatives are becoming popular as people want to lower their calorie intake or reduce the risk of diseases such as diabetes. 5 cups of flour
1 cup of ground almonds
300g butter
2 eggs
1/2 a tablespoon of sweetener
1 tablespoon of vanilla extract (optional)

Steps:

  • Firstly to make our sugar-free biscuits you need to melt the butter, either in the microwave or in a small saucepan on low heat. When liquefied, place it in a bowl, add the sweetener and whisk both ingredients together. If you use stevia as a sweetener, you should reduce the amount a little as its flavor is more intense.
  • Then, crack the eggs and add them to the bowl to start making the dough for your sugar-free biscuits. Beat all the ingredients again until they're well mixed. Now it's time to add 1 tablespoon of vanilla extract to increase the flavor. You could also use other extracts or powders, such as cinnamon, if you want to give the flavor a little kick of spice.
  • In another bowl, add the ground almonds and sift in the flour while mixing both ingredients together. Then you need to gradually combine the contents of both containers by incrementally adding the flour and ground almond mixture into the bowl containing the beaten egg and butter. Don't do it the other way round as it will be harder to mix and you could ruin your mixture. Keep stirring to avoid lumps until you achieve a smooth and even dough.
  • Once you have prepared the dough, shape it into balls and flatten them slightly to create the traditional biscuit shape. Next, preheat the oven to 180 degrees and cover the base of a baking tray with a sheet greaseproof paper. Place the biscuits onto the tray, and try to leave large gaps in between, so they don't join together as the dough rises in the oven's heat.
  • After about 10 or 15 minutes when the biscuits are starting to brown, you can remove them from the oven. Leave them to cool for a while and your sugar-free biscuits will be ready to eat. You can put them in a sealed tin or tub and eat them at your leisure, but you should eat at least one while they are still warm as this is when they are the most delicious.

bananas - 1
apples - 5 medium - sized, pureed
oats - 1 1/2 cups
coconut flakes - to taste
sunflower seeds - to taste, raw
nuts - to taste, raw

Steps:

  • The banana needs to be well-ripened, mash it and mix with the apple puree.
  • Add the remaining ingredients; feel free to add others and however much of them you like, stir.
  • You need to obtain a biscuit dough. If the mixture is too runny because of the puree, simply add more oats (mine were coarse).
  • Scoop from it with a spoon and place onto baking paper. Press lightly to shape it into a biscuit. Once youve placed all the biscuits onto baking paper, place in a preheated 356°F (180 °C) oven.
  • Keep an eye on them to see when theyre baked until reddened, it took mine 15 min.
  • Theyve got a pleasant sweetness, even without sugar, are healthy, homemade. Enjoy
