Christine is right, this is a super easy yeast rolls recipe. They bake up warm and soft with golden brown tops. Serve with butter or a bit of jam and you too will fall in love with these delicious dinner rolls.

1 cup(s) water, warm
1 package(s) active dry yeast
1/4 cup(s) sugar
1 teaspoon(s) salt
3 tablespoon(s) butter, softened
1 large egg, beaten
3 1/2 - 4 cup(s) all-purpose flour

Steps:

  • Pre-heat oven 350 degrees. Put water and yeast in large mixing bowl and add next 4 ingredients. Beat with dough hook until well blended.
  • Add 3 1/2 to 4 cups flour and mix until soft dough forms (should not be sticky).
  • Put out onto floured board and knead a few times until smooth.
  • Place in greased bowl, cover with plastic wrap and let rise in warm place for approximately 45 minutes.
  • Punch down and turn out onto floured board.
  • Shape into 12 rolls and place in greased 13x9 inch baking pan. Let rise again about 30 minutes.
  • Bake at 350 degrees for 20 minutes.
  • Brush tops of rolls with butter (or equivalent).

"Light and fluffy! These are fabulous with big meals like Thanksgiving or Christmas. A little bit of sea salt gives a nice salty crunch every now and then. Wonderful!"

3 (1/4 oz) package Yeast active dry yeast
1 cup Lukewarm water 105 - 115 degrees
1/4 cup Canola or Safflower Oil
1 Large Egg
3/4 cup Sugar
1 1/2 cups Water (more if needed)
6 1/2 cups Bread Flour
1 Tablespoon Sea Salt
1 Pinch Cinnamon (optional)
Extra virgin olive oil for brushing on top

Steps:

  • "1) Dissolve the yeast in a large mixing bowl with the cup of lukewarm water. Let it stand for about 5 minutes. 2) Add the oil, egg, sugar and the 1 1/2 cups of water. Whisk together by hand. 3) Add the flour and mix on medium low speed until the dough holds together, about five minutes. The dough will be wet looking, but if it doesn't form a cohesive ball, add a few tablespoons more of flour. If the dough is too dry, add water, a tablespoon at a time, until it's not so dry. Let dough rest for 20 minutes, then add the salt and cinnamon (if desired) and knead well - at least 5 - 10 minutes. 4) Spray a large mixing bowl with cooking spray and put the dough in the bowl and cover with a tea towel and let rise for about an hour and a half. 5) Preheat oven to 350 degrees, and spray a large sheet pan with cooking spray or line with parchment paper or a silicon baking mat. 6) Punch down dough and pinch off pieces of the dough and roll into golf ball size (for dinner rolls), or tennis ball size (for sandwich rolls). Arrange the dough on the pan, with sides touching, then cover with the tea towel and let rise for 30 minutes. The rolls will not double in bulk during this rise. 7) Bake rolls for 18-30 minutes, or until golden brown. Brush tops with Olive Oil or butter while still hot."

I've finally tried this recipe and tweaked it enough to get it reasonably close. These are the closest I've seen to my favorite rolls in places like Quincy's, Grandy's, etc. It's a nice soft squishy yeast roll, perfect with any meal. To clarify the directions since one reviewer mentioned that they had a problem with their first batch: Make sure that your machine's dough cycle includes the rising time! I thought everyone's did, but apparently not. (My own personal machine mixes up the ingredients and then there's a total rise time of a little over an hour (closer to 1.5 hours). So, if you think your ABM just mixes things up but doesn't allow for rising time, add a 2 hour (approx) rise time between steps 1 and 2. If your machine's dough cycle DOES have a built in rising time, then you're all set, and you can follow the instructions exactly, no need for extra rising time.
