Salami is a type of cured meat that is dried, fermented and then, made into sausages. It is seasoned and has a strong flavor. It can also be eaten uncooked.

Number Of Ingredients 8

2 pounds Ground Beef
¼ teaspoon Garlic Powder
¼ teaspoon Onion Powder
½ teaspoon Mustard Seeds
2 teaspoons Curing Salt (Morton Tender Quick)
1 teaspoon Ground Black Pepper
1 teaspoon Red Pepper Flakes
1 teaspoon Liquid Smoke Flavoring

Steps:

  • Add ground beef, garlic powder, liquid smoke and mustard seeds in a bowl. Also, add curing salt, red flakes, and black pepper to it. Mix them properly.
  • Roll the mixture into a log and wrap it tightly with aluminium foil. Keep it in the refrigerator for about 24 hours.
  • At 325oF, preheat the oven and place the rolls in a broiler pan. Fill the pan with water to keep the salami moist.
  • Bake the roll for an hour and a half in the preheated oven. Now, unwrap the salami but make sure to cool the rolls properly.
  • Cut the roll into the slices and serve it with cheese or some sauce.

2 pound(s) hamburger
1/2 teaspoon(s) mustard seeds
1/2 teaspoon(s) crushed black pepper
3 clove(s) garlic, minced
2 tablespoon(s) morton's quick-cure salt
1 cup(s) water

Steps:

  • Mix all ingredients well. Divide into two parts, and mold each part into a log. Wrap each part in foil. Twist or tie ends tightly. Refrigerate for 24 hours, then put in a large pan of boiling water. When the water returns to a boil, boil for 1 hour. Remove from water and poke holes in the bottom of the foil with a fork, then let drain. Refrigerate again for 24 hours. Salami may be sliced for sandwiches, cubed or sliced for an appetizer tray, or eaten as a quick snack.

  • "Mix all the dry ingredients thoroughly. Break up 1 pound of the meat into the bottom of a large pan. Sprinkle a quarter of the dry seasoning evenly over meat. Then add a quarter of the chiles. Continue by quarters with balance of meat, spices, and chiles. Pour sherry over meat. Now, mix by hand 15 minutes. After mixing, press meat mixture down flat in pan, cover with lid, and place in refrigerator about 12 hours. After it has cooled, divide meat into four parts and form each into a roll 8 inches long. Place each roll into a 10-by-12-inch piece of net material. Twist and secure each end of netting with a metal fastener (such as seals a package of bread). Place rolls on a rack over a shallow pan to catch drippings and bake in a 225-degree oven for 4 hours. Allow rolls to cool and place in a paper bag (don't put in a plastic bag or salami will sweat). Salami will keep in the refrigerator at least two weeks and will freeze for two months. To serve, slice thin. "
