Leftover roast beef? Use it here! This recipe's been approved by the Iowa Beef Industry Council. I'm not sure how much they know about Chinese cuisine, but they do know their beef! NOTE: Rice must be cold or it will stick to the pan. Rice that is 24 hours old is suggested. Do NOT use Minute Rice.

Number Of Ingredients 8

2 eggs, beaten
2 tablespoons cooking oil or 2 tablespoons butter
1 garlic cloves, minced or 1/8 teaspoon garlic powder
1 cup any vegetables
1/4 cup onion, chopped
1 cup cooked beef, chopped
2 cups cold cooked rice
2 tablespoons soy sauce

Steps:

  • Scramble eggs. Set aside.
  • In large frying pan, heat 2 tablespoons oil on medium high heat.
  • Add garlic to heated oil and stir.
  • Add vegetables, onion and beef.
  • Mix until blended and cook, stirring constantly, 2-3 minutes.
  • Add rice and cook, stirring constantly until rice is hot.
  • Stir in soy sauce and eggs.

4 cups leftover rice
1/2 cup minced beef (marinated with a small pinch of salt and pepper)
1/2   cup fresh diced green pepper
1/2 cup diced fresh red pepper
3 garlic cloves (sliced )
2 tbsp. cooking oil
1 tbsp. light soy sauce (optional)
Salt to taste 
1/2 tsp. cumin powder

Steps:

  • In a small bowl, marinate beef with pinch of salt and pepper. Set aside for 10 minutes.
  • Pour oil in wok and add garlic slices. Fry over slow fire until aromatic. Transfer the garlic slices out.
  • Add minced beef in and fry for a while until aromatic.  
  • Place rice in and mix well.
  • Place light soy sauce, fried garlic and chopped peppers in. Give a big stir fry to mix everything well. Add cumin powder and salt accordingly lastly.

  • In a medium bowl, combine the sirloin with 1 tablespoon of the soy sauce, 1 teaspoon of the sesame oil and a pinch of red-pepper flakes. Bring a medium pot of salted water to a boil. Stir in the rice and boil until just done, about 10 minutes. Drain the rice and return it to the pot. Meanwhile, heat a large nonstick frying pan over moderately high heat. Put the beef mixture in the pan and cook, stirring occasionally, until browned and just cooked, 1 to 2 minutes. Remove. Put the watercress and the teaspoon of soy sauce in the pan and cook until the watercress is just wilted, about 30 seconds. Remove. Reduce the heat to moderate. Put a few drops of sesame oil in the frying pan. Add the egg to the pan and cook until just done, about 30 seconds. Remove from the pan and cut into thin strips. Heat the cooking oil in the pan over moderately high heat. Add the scallions and 1/8 teaspoon red-pepper flakes and cook, stirring, for 1 minute. Add the cooked rice to the pan and heat, stirring, for 3 minutes. Add the remaining 2 tablespoons soy sauce, the beef, watercress and egg. Heat, stirring, 1 to 2 minutes longer. Drizzle the remaining teaspoon of sesame oil over the top. Wine Recommendation: A California merlot, with its plum flavor and undercurrents of chocolate and herbs, makes a rich accompaniment to the beefy rice. As always with California wines, try to find one that is lightly oaked; a heavy oak taste tends to overwhelm food.
