There are plenty of good pizza roll recipes but none of the fillings suited my family's tastes so I came up with this one. If you prefer you can replace some of the meat with sauteed vegetables such as mushrooms and peppers.

Yield 24 pizza rolls, 24 serving(s)

Number Of Ingredients 5

8 ounces bacon, sliced 1/4 inch
12 ounces pepperoni, mild, cut into 1/4 inch dice (buy a chunk at the deli and peel the skin)
1 cup pizza sauce (I use Freezer Pizza Sauce, purchased is fine)
6 ounces mozzarella cheese, shredded (bagged pre-shredded pizza cheese is good)
24 egg roll wraps

Steps:

  • Fry bacon until just crisp and drain on paper towels. Crumble when cool.
  • Wipe the bacon grease out of the pan with a paper towel and fry pepperoni in same pan. Drain on paper towels.
  • Combine bacon, pepperoni, sauce and cheese.
  • Working with 4 wrappers at a time place 2 heaping tablespoons of filling on each wrapper. Brush all 4 edges with water. Roll one corner over the filling, fold in the 2 sides and then roll up completely.
  • Heat an inch of vegetable oil in a large deep skillet to 375 degrees. Fry 4 wrappers at a time. When both sides are golden remove to a baking sheet lined with newspaper and paper towel to cool.
  • These may be eaten immediately or frozen. To reheat place in a single layer on a baking sheet in a 350 degree oven until warmed through.

Number Of Ingredients 10

1 - roll refrigerated pizza dough
1 package(s) hidden valley ranch dressing mix
2 tablespoon(s) parmesan cheese, grated
1 tablespoon(s) olive oil or melted butter
- sharp cheddar cheese (as needed)
- mozzarella cheese (as needed)
8 slice(s) bacon, cooked and crumbled
1 cup(s) chicken, cooked & shredded
3/4 cup(s) mayo
3/4 cup(s) milk

Steps:

  • First take 1 teaspoon of your ranch dressing mix and combine it with 1 1/2 T parmesan cheese. Set aside. Combine the remaining ranch mix with 3/4 C mayo and 3/4 C milk and place in the fridge to chill.
  • Preheat oven to heat specified on pizza dough package. Usually it’s 400-425 degrees.
  • Unroll your pizza dough onto a lightly floured surface. Pat or roll the dough so it’s about 12? by 8?. You’re going to want to cut it into 24 squares, so just eyeball it if you need to. Use a pizza cutter to slice the dough into 24 squares. Place cheese and desired toppings on each square.
  • When all of your dough squares have cheese and toppings on them, carefully lift up each square and wrap the dough around the toppings.
  • I grab the four corners first and then squeeze the seams shut. Then place them seam side down in a lightly sprayed pie pan (or similar sized dish). Brush with melted butter or olive oil and sprinkle with the parmesan-ranch mixture.
  • Place your rolls in the oven. I’ve noticed baking time really depends on the type of dough I’m using. Whether it’s different brands from the store, or homemade dough, they all take different amounts of time. Set your timer for 10 minutes and check on them after that. They may take up to 15 or 20 to be done. Take them out when they’re lightly golden on top. Serve them warm with a side of freshly made ranch dressing for dipping. ENJOY!!!

  • Heat a medium skillet over medium heat. Add the bacon, onion and celery, and cook for 4 minutes, until slightly softened. Add the garlic and cook 1 more minute. Remove from the heat and transfer the bacon mixture to a plate. Let cool for 10 minutes. In a large bowl, combine the sausage, parsley, panko, 1 egg, salt, pepper and cooled bacon mixture. Mix well to combine. Cover and refrigerate until ready to use. Meanwhile, open the puff pastry sheets on a very lightly floured cutting board (you should have 2 sheets, measuring 10-inches by 10-inches). Cut each in half to make 4 rectangles, 5-inches by 10-inches each. Lay each rectangle so that the long side faces you. Remove the sausage mixture from the refrigerator and divide it into 4 portions. Form each portion into the shape of a long log, about 1-inch thick, and place one lengthwise in the center of each puff pastry rectangle. (The sausage should stretch the full length of the pastry). In a small bowl, beat the remaining egg with 1 tablespoon of water. Brush all of the borders of the puff pastry with the egg and carefully roll the pastries over the sausage mixture to create a log shape (making sure that the borders overlap slightly). Place each roll seam side down on a sheet tray lined with parchment paper. Freeze for 30 minutes or refrigerate for up to 1 hour. (Hang on to the egg wash for later). Preheat the oven to 400 degrees. Using a sharp knife, cut each sausage roll into 6 equal portions. Transfer the pieces to a parchment lined baking sheet, seam side down, about 1-inch apart. Brush the tops of the rolls with the egg wash. Bake for 20-22 minutes, or until the puff pastry is puffed and golden on top.
