- Preheat oven to 425°. Line a baking sheet with parchment. In a large bowl, whisk the flour, oats, baking powder, salt, and pepper. Add the butter into the dry mixture and toss evenly to coat. Using your finger tips, press the butter into the flour mixture until it has the texture of coarse meal, with a few pea-size pieces remaining. Stir in the cheddar, bacon, and chives. In a medium bowl, whisk the cream and eggs until well combined. Pour the wet ingredients into the dry ingredients and stir until a dough begins to form but mixture is still crumbly. Turn the dough out onto the prepared baking sheet. Knead just to combine (do not overwork). Then pat into a 6-inch circle, about 1/2 inch thick. Cut into 8 wedges and spread evenly on pan. Sprinkle tops with more oats. Bake, rotating sheet halfway through, until golden brown, 20 to 24 minutes. Let cool before serving.

Steps:
- Heat oven to 200C/180C fan/gas 6 and grease a 12-hole muffin tin. In a frying pan over a medium heat, fry the bacon for 5 mins until golden. Let it cool, then chop into chunks and set aside
- In a bowl, combine the flour, baking powder and 1 tsp sea salt. Using your fingers, mix the butter into the flour mixture until it resembles breadcrumbs
- In a small bowl, whisk together the milk, oil and egg. Tip into the dry mixture, and gently mix until the flour mixture is mostly moistened (lumps will remain). Stir in the bacon, chives and cheese, then spoon the batter into the muffin tin.
- Put the muffin tin in the oven and bake for 20 mins or until the tops are golden brown. Serve warm.

For the white chocolate, one 4-ounce bar of Ghirardelli white chocolate will give you the perfect amount of chunks after you chop it up. If you can't find that brand, any brand of white chocolate will do, or you can use 4 ounces of white chocolate chips. The new Mac & Cheese at Chick-fil-A is baked fresh every day, and the recipe is more complex than you might expect from a fast food chicken chain. According to the official list of ingredients, the formula includes several different kinds of cheese including Parmesan, Romano, and award-winning hard cheese from Wisconsin called BellaVitano. The BellaVitano cheese adds a subtle nuttiness to the mix and all three hard cheeses contribute big umami flavor that nicely complements the blend of white and yellow cheddars.
Those five kinds of cheese combine to make a great flavor, but the blend would melt into a greasy mess if it weren’t for the assistance of one more ubiquitous cheese: American. The benefit of American cheese—which makes up for its lack of flavor—is found in the sodium citrate it contains. This natural sodium salt is an emulsifier that keeps the fat in the cheese from separating (and it also happens to be useful in preventing kidney stones!). By first melting several slices of American cheese in the milk we don’t need to make a roux to create a perfectly smooth cheese sauce.
As for cooking the macaroni, here’s another secret: don’t follow the directions on the box for al dente pasta, because you don’t want the pasta to be al dente, or slightly tough. You want to cook the elbow macaroni for 20 minutes so that it absorbs as much water as possible. This will ensure that the pasta won’t suck up liquid in the cheese sauce when they are combined, and the sauce will maintain a perfectly creamy consistency.

When that time comes, measure some of the mix into a cup and add boiling water. Stir well and enjoy while watching shows about Europe on the Travel Channel to enhance the experience.
