3/4 cup salsa (mild or hot)
1/2 cup sour cream (softened) or 1/2 cup cream cheese (softened)
4 (10 inch) flour tortillas
1 1/2 cups grated cheddar cheese
1 tablespoon oil
2 cups chicken meat
1 1/2 teaspoons hot sauce (you decide)
salt, to taste
2 cups finely chopped iceberg lettuce
1 cup chopped tomato

Steps:

  • In a small bowl, mix salsa and mayo; set aside.
  • Preheat oven to 350; arrange tortillas on two baking sheets; sprinkle with cheese; bake for five minutes (cheese melts).
  • While that's cooking, warm oil in large skillet on medium-high; add chicken, sauce and salt and stir-fry until cooked through.
  • Place tortillas on counter, top with lettuce, chicken, tomatoes; roll up, cut in half and serve with the mayo-salsa dip.
  • OPTIONS: Black or green olives.
  • SUBSTITUTIONS: Crab or shrimp instead of chicken, romaine lettuce for the iceberg, Monterey Jack for the Cheddar, corn instead of flour tortillas.

This fajitas recipe is a copycat of Applebee's sizzling skillet fajitas. Devour a savory and spicy dish on your next Mexican-theme feast.

Number Of Ingredients 22

¼ cup or lemon lime juice
3 tbsp olive oil
2 tsp garlic powder
1½ tbsp soy sauce
1 tsp for marinade salt
1 tsp for marinade ground black pepper
1 bag strong tea leaves
1 cup warm chicken broth
1 tsp cayenne pepper
1 lb butterflied, cut into strips boneless chicken breast
1 (roughly 8 oz), sliced thinly medium red onion
1 cup sliced and seeded green bell pepper
1 cup sliced and seeded red bell pepper
? tsp to taste salt
? tsp to taste ground black pepper
or corn, warm flour tortillas
cheese, tomato salsa, or other choice of toppings sour cream
1 oz shredded green cabbage
2 oz chicken filling
2 tbsp tomato salsa
2 tbsp guacamole
1 oz grated cheddar cheese

Steps:

  • Infuse the chicken broth with the tea leaves for at least 20 minutes, or until flavors have infused. The longer the infusion, the better and stronger the smoky flavor will be. Discard the tea bag. Set aside until cool.
  • Combine the chicken, green and red bell peppers, red onion, salt, garlic powder, lime juice, black pepper, cayenne pepper, and soy sauce in a large bowl. Add the chicken broth infused with tea and mix.
  • Cover with a cling wrap and allow to marinate and chill for at least 2 hours, best if overnight.
  • Drain the marinade. Heat up the oil in a large skillet, saute the chicken filling over medium-high heat until the meat is cooked through and the vegetables are tender. Season to taste with salt and pepper. Adjust accordingly. Transfer into a large bowl.
  • Assemble the fajitas with your choice of tortilla and toppings.
  • We recommend using warm flour or corn tortillas, and adding green cabbage, chicken filling, tomato salsa, guacamole, and cheddar cheese.
  • Serve and enjoy!

Sprinkle about 1/2 cup of the combined cheeses over the surface of the tortilla while it heats up in the pan. When the cheese begins to melt, remove the tortilla from the pan.
