2/3 cup quick-cooking oats
3/4 teaspoon baking powder

1/4 teaspoon salt
1 cup chopped peeled apple
1/2 cup chopped dried cranberries
powdered sugar (to garnish)

Steps:

  • Combine butter and sugar. Add eggs, honey and vanilla.
  • Combine dry ingredients. Add wet ingredients to dry. Fold in apple and cranberries.
  • Pour into 8 inch square baking pan. Bake at 350 for about 35 minutes or until done.
  • Cool on wire rack. Sprinkle with powdered sugar.

Crust
1 cup all-purpose flour
1 cup uncooked quick cooking oats
1/2 cup firmly packed brown sugar
1/2 teaspoon baking soda
1/2 cup cold Land O Lakes® Butter cut into chunks
Filling
1 cup sweetened dried cranberries
1/2 cup sugar
1/4 cup cranberry-apple juice
2 medium (2 1/2 cups) apples, peeled, cored, chopped
2 tablespoons orange marmalade
1 teaspoon cornstarch

Steps:

  • Heat oven to 350°F.
  • Combine flour, oats, brown sugar and baking soda in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs.
  • Press two-thirds crust mixture evenly onto bottom of lightly greased 11x7-inch glass baking dish. Bake 10-15 minutes or until puffed.
  • Combine cranberries, sugar, cranberry-apple juice and apples in 2-quart saucepan. Cook over medium heat, stirring occasionally, 5-6 minutes or until mixture is thickened.
  • Stir together orange marmalade and cornstarch in bowl. Gradually stir into hot fruit mixture. Continue cooking, stirring occasionally, 1-2 minutes or until mixture boils and is thickened.
  • Spread fruit mixture over hot, partially baked crust. Sprinkle with reserved crumb mixture. Bake 22-25 minutes or until lightly browned. Cool completely. Cut into bars.
