The perfect lobster ravioli sauce is creamy, rich and flavorful. This version — made with butter, cream, garlic, Parmesan, white wine and lemon — complements sweet lobster flawlessly.

1 lb lobster ravioli
2 tblsp butter
2 cloves of garlic
1/2 cup(s) dry white wine
1 tsp lemon zest
2 tblsp freshly squeezed lemon juice
1 1/14 cup(s) heavy cream
1/3 cup(s) grated Parmesan cheese
Salt and pepper to taste
Fresh herbs for serving (optional)

Steps:

  • <p>Gather all ingredients and bring a <a href="https://www.cozymeal.com/shop/cookware" target="_blank" rel="noopener">pot</a> of salted water to a boil. Cook the ravioli to al dente according to package instructions.</p>
  • <p>Melt the butter in a <a href="https://www.cozymeal.com/shop/cookware" target="_blank" rel="noopener">saucepan</a> over medium heat. Cook the garlic until softened and fragrant, about 1-2 minutes.</p>
  • <p>Zest the lemon using a citrus zester such as <a href="https://www.cozymeal.com/shop/p/true-zesty-citrus-zester-and-channel-knife" target="_blank" rel="noopener">True&reg; Zesty&trade; Citrus Zester and Channel Knife</a>. Add the white wine, lemon zest and lemon juice. Bring to a simmer and simmer for 2 minutes. Whisk in the cream and season with salt and pepper. Let the sauce simmer a few minutes until slightly thickened. Whisk in the cheese.</p>
  • <p>Add the ravioli to the sauce and toss to coat. Garnish with fresh herbs and additional cheese.</p>
  • <p>Serve immediately. Enjoy!</p>

Growing up in Boston, I never knew that this 50's "once-a-week-at-home dinner" and "once-a-week-at-school lunch" was a regional dish! I still make this probably once every 2 weeks. Easy, cheap and comfort food all rolled into one huge pot! (It is always called American Chop Suey here, but while I was living in LA friends called it Goulash - so I've compromised!)

Yield 1 pot, 6-8 serving(s)

Number Of Ingredients 9

1 lb ground beef
1 large onion, chopped
1 large green pepper, chopped
1 tablespoon garlic salt
1 teaspoon pepper
28 ounces diced tomatoes with their juice
15 ounces tomato sauce
1 lb medium pasta shells or 1 lb elbow macaroni
1 cup cheddar cheese or 1 cup monterey jack cheese, shredded

Steps:

  • Brown ground beef, onion and pepper.
  • Season with garlic salt and pepper.
  • Add tomatoes and tomato sauce.
  • Simmer 10 minutes while macaroni is cooking.
  • Boil macaroni al dente, drain, rinse.
  • Return macaroni to pot, add beef and tomato mixture.
  • Serve in bowls with shredded cheese.
  • Even better left over and reheated (add a little water or tomato juice when reheating, if too dry).

I've found that the only place in the world that this recipe is called "American Chop Suey" is in and around the Boston area. Everywhere else it is known as goulash. Go into most any diner north of Boston, and "American Chop Suey" is on the lunch menu. This is a one pot meal that is terrific during these budget-conscious times. It is a comfort food that brings back wonderful childhood memories of simpler times. I've told friends that have asked for the recipe that if I give it to them, they have to call it "American Chop Suey", not goulash:).
