Air Fryer Frittata. How to make a delicious and healthy air fryer breakfast frittata. Loaded with sweet potatoes, spinach, peppers, parmesan cheese and Mediterranean seasonings, this air fryer frittata is a game changer.

Air Fryer Baking Pan
250 g Sweet Potatoes
200 g Mixed Peppers
1 Tbsp Wilted Spinach
2 Tsp Extra Virgin Olive Oil
4 Large Eggs
2 Tbsp Single Cream
56 g Parmesan Cheese
6 Cherry Tomatoes (halved)
1 Tsp Oregano
2 Tsp Thyme
Salt & Pepper

Steps:

  • Peel sweet potatoes. Dice mixed peppers and sweet potatoes. Place in a bowl and add olive oil, thyme and salt and pepper. Mix with your hands until everything is well coated.
  • Load into the air fryer basket and cook for 10 minutes at 180c/360f.
  • Beat eggs with cream, add extra salt and pepper and mix in half the grated parmesan cheese.
  • When the air fryer beeps load the vegetables into the air fryer baking pan, including the wilted spinach and pour over the egg mixture.
  • On top of the egg mixture add cherry tomatoes, sprinkle with salt, pepper, oregano and the last of the grated parmesan cheese.
  • Air fry for 16 minutes at 180c/360f, followed by a further 5 minutes at 160c/320f.
  • Allow to cool slightly, slice and serve.

6 eggs
1 cup cooked ham, diced
1 cup cheese, diced OR shredded
1 green pepper, diced
1/2 small onion, diced
2 tsp Italian seasoning
1 cup light cream

Steps:

  • Plug in the air fryer oven.
  • Spray the souffle dish with nonstick cooking spray.
  • Add the uncooked eggs to the dish.
  • Pour the cream into the dish and combine with the eggs.
  • Add the seasonings and vegetables to the dish and gently stir to combine.
  • Place the dish into the air fryer oven. Put it on a rack near the middle.
  • Set the air fryer oven to bake at 360 for 30 minutes.
  • Once the cooking time has finished, remove the dish from the air fryer oven.
  • Slice and serve immediately.
