FAJITA-STYLE PASTA RECIPE | BBC GOOD FOOD

- Heat the oil in a large shallow casserole or frying pan. Add the chicken and fry for 5 mins over a medium heat until golden all over. Remove and set aside on a plate.
- Put the onion and peppers in the same pan and fry over a medium heat for 8-10 mins. Add the garlic, dried herbs and spices and cook for 1 min. Add the tomato purée and cook for 2 mins. Return the chicken to the pan and pour in the cream, stirring to combine. Season to taste.
- Cook the pasta following pack instructions, then drain and reserve 150ml of the cooking water. Add the pasta to the pan with 50ml of the water and stir everything together over the heat. Add a little more water to loosen if needed. Season to taste and stir through the parsley. Divide between six bowls and top with a little cheese and extra chopped parsley, if you like. This can be packed into a lunchbox and eaten cold, too.

- Whisk together the eggs, milk, cream, vanilla and cinnamon. Lay the brioche slices in a single layer in a shallow dish and pour the egg mixture over them. Allow to soak for 2-3 mins, then carefully turn over and soak for 2 mins more.
- Heat 1 tbsp of the vegetable oil and butter in a non-stick frying pan over a medium heat until foaming. Carefully lift 2 slices of the soaked brioche out of the dish and add to the frying pan. Fry for 3 mins on each side, until golden and crisp, then place on a wire rack over a baking tray in a warm oven while you repeat with the remaining slices.
- Serve dusted in icing sugar and scattered with fresh berries, if you like.

BUFFALO BRUSSELS SPROUTS

- 1 Preheat the oven to 200 degrees. 2 Remove any damaged or discoloured leaves from the sprouts, and slice them in half through the base. 3 Line a tray with baking paper and place the sprouts on it, drizzle some olive oil over them and mix well to coat. Lay them all cut side down and roast for 18-20 minutes until golden at the edges. 4 Meanwhile, melt the butter in a pan, add the hot sauce and honey. Mix well and leave to simmer for a minute so the flavours combine and it reduces a little. Set aside. 5 Place the garlic, buttermilk, mayonnaise, vinegar, salt and a teaspoon of chives and parsley in a jar. Place the lid on and shake well to combine. 6 As soon as the sprouts are cooked, spread them on a platter. Drizzle the warm hot sauce over, followed by the ranch dressing, blue cheese and herbs. Serve right away.

- Preheat oven to 200°C. Line a 25cm-28cm pie tin (see note) with pastry base dough, pressing well into the sides. Fill with chilled beef-cheek filling. Brush edge of pastry with eggwash and top with puff pastry lid. Pierce a hole in the centre to allow steam to escape. Trim edges, press all the way around to seal, and brush top with eggwash. Use trimmings to create decorations and brush with eggwash again. Bake until pie is deep golden, pastry is cooked through and filling is hot (40-45 minutes).
