I wanted to make a fried rice similar to the kind served at Mall food courts and the local Chinese buffet. Since the saffron rice is already seasoned, it's faster than ordering take-out!

Number Of Ingredients 7

1 (5 ounce) package yellow saffron rice pilaf mix
1/2 cup diced chicken breast
2 tablespoons butter or 2 tablespoons margarine
1 egg, beaten
1/2 cup frozen peas and carrot
1/4 cup frozen chopped sweet onion
1 tablespoon soy sauce

Steps:

  • Cook rice according to package directions.
  • Refrigerate until cool or overnight.
  • In a large nonstick skillet, saute chicken in 1 Tablespoon butter over medium heat for 5 minutes or until no longer pink.
  • Remove from skillet.
  • Add remaining butter; cook egg over medium heat about 1 minute or until almost set, then separate into small pieces, cooking until dry.
  • Remove from skillet.
  • Add rice to skillet.
  • Cook, stirring frequently, over medium heat 10 minutes.
  • Add peas and carrots and onions.
  • Cook 5 minutes.
  • Return cooked chicken and egg to the rice mixture.
  • Add soy sauce.
  • Cook until all is heated through.

Yellow Fried Rice is specifically from the U.S. and is not authentic Chinese fried rice. The yellow color comes from food coloring that is added which is optional.

2 cup Long Grain White Rice
600 milliliter Water
1 teaspoon Granulated Sugar
1 teaspoon Salt
1 1/2 teaspoon Chicken Bouillon Powder
1 dash Ground White Pepper
4 tablespoon Oil
1/4 teaspoon Yellow Egg Shade Food Coloring
100 gram Boneless Pork Leg Roast
1/2 cup Onion
1 stalk Scallion
2 tablespoon Water

Steps:

  • In a bowl, mix Granulated Sugar (1 teaspoon), Salt (1 teaspoon), Chicken Bouillon Powder (1 1/2 teaspoon) and Ground White Pepper (1 dash).
  • Wash and rinse the Long Grain White Rice (2 cup) a couple of times to remove impurities. Rinse it under running water through a strainer, using your fingers to let the water run through the uncooked rice.
  • In a heavy bottom pot, add in the rice, seasoning mixture, Water (600 milliliter), Oil (2 tablespoon) and Yellow Egg Shade Food Coloring (1/4 teaspoon).
  • Stir everything together and cover with a lid.
  • Bring to a boil and then lower the heat at the lowest setting and cook for 15 to 20 minutes or until all the water is absorbed by the rice.
  • Turn off the heat and let it steam for 10 to 15 minutes with the lid on. Do not open the lid.
  • Use a fork to fluff the rice.
  • Transfer to a pan and let it cool to room temperature. Once it cools down, refrigerate the rice for next day use.
  • Dice your Onion (1/2 cup) and roughly slice Scallion (1 stalk) into strips, using only the green portion.
  • Dice your Boneless Pork Leg Roast (100 gram) or char sui pork. Measure 200g or 7 oz of the cooked rice.
  • In a smoking hot wok, add Oil (2 tablespoon) and diced onion. Saute the onion just before translucent.
  • Add in the roast pork or any available ingredients. Since the roast pork is already cooked, just saute for 1 minute to heat it through.
  • Add in the 200 grams of rice and cook at medium high heat until the rice is hot. Make sure to continuously move the fried rice around to ensure even cooking.
  • Add the the sliced green onion and Water (2 tablespoon) and continuously stir for a few seconds.
  • To plate, flaten some rice in your ladle. Turn over a plate and hold it over the ladle with rice. Turn the plate over along with the ladle to get your perfect fried rice.
  • Serve and enjoy!
