1 clove garlic, minced
½ teaspoon Italian seasoning
½ pound fresh snow peas, trimmed
1 tablespoon water, or more as needed
1 tablespoon extra-virgin olive oil
1 teaspoon fresh lemon juice
kosher salt and ground black pepper to taste

Steps:

  • Melt butter in a skillet over medium heat; cook and stir garlic until fragrant, about 30 seconds. Stir in Italian seasoning and snow peas. Add water; cook and stir until peas are bright green and tender, about 2 minutes. Stir in olive oil and lemon juice. Season with salt and black pepper.

16 fl oz fresh snow peas
2 tsp plus more to taste kosher salt
2 tbsp unsalted butter
1 pc zested lemon
½ cup slivered or sliced, toasted, optional almonds
to taste freshly ground black pepper

Steps:

  • Gather the ingredients.
  • Break the stem ends off of the snow peas and pull off the strings. Rinse well.
  • Fill a medium saucepan with about 2 quarts of water and 2 teaspoons of salt. Bring the water to a boil over high heat.
  • Add the snow peas and let the water return to a boil.
  • Boil the pea pods for 30 to 45 seconds. Don't overcook them or they will lose their crunch.
  • Immediately drain the peas in a colander.
  • Wipe out the pan, making sure it is dry. Add the butter to the pan and place it over medium heat.
  • When the butter begins to sizzle, add the drained snow peas.
  • Sauté the pea pods in the butter, stirring, for about 1 minute.
  • Add the lemon zest and toasted almonds (if using) and continue cooking for 1 minute.
  • Season to taste with salt and freshly ground black pepper. Serve and enjoy.

  • In a bowl, mix together soy sauce, sherry, brown sugar, cornstarch, and ginger. Pour half the liquid over the sliced meat in a bowl and toss with hands. Reserve the other half of the liquid. Set aside. Heat oil in a heavy skillet (iron is best) or wok over high heat. Add snow peas and stir for 45 seconds. Remove to a separate plate. Set aside. Allow pan to get very hot again. With tongs, add half the meat mixture, leaving most of the marinade still in the bowl. Add half the scallions. Spread out meat as you add it to pan, but do not stir for a good minute. (You want the meat to get as brown as possible in as short amount a time as possible.) Turn meat to the other side and cook for another 30 seconds. Remove to a clean plate.
