Yield 6

Number Of Ingredients 11

4 large (32 oz chicken breast halves, thinly sliced in 3 (12 cutlets total))
1/4 cup unbleached flour*
1/2 cup egg whites (beaten)
1 large lemon (juice of (about 3 tbsp) or more, to taste)
1/2 lemon sliced thin
1/3 cup white wine
15 oz low sodium chicken broth
cooking spray
salt and fresh pepper (to taste)
3 tbsp fresh chopped parsley
1 tbsp butter

Steps:

  • Season the chicken with salt and pepper.
  • Place the flour in a bowl, and the beaten egg whites in another bowl.
  • Heat a very large non stick pan over medium heat. When hot spray with cooking spray to lightly coat the bottom of the pan.
  • Lightly flour chicken, then dip in eggs and add to the hot pan a few at a time. Saute chicken 2-3 minutes on each side. When cooked, transfer onto a plate.
  • Repeat until all chicken has been cooked and set aside.
  • Once all chicken is cooked, place the chicken broth in the bowl with 1 tablespoon of flour and whisk.
  • Add to the pan along with the juice of the lemon, white wine, lemon slices, parsley and butter and simmer over medium heat for about 2 minutes so it reduces slightly and thickens. Turn off heat.
  • Return chicken to the pan to combine with the sauce.
  • Serve immediately.

CHEF JOHN'S CHICKEN FRENCH RECIPE | ALLRECIPES

Chef John's Chicken French Recipe | Allrecipes image

Chicken French has everything I love in a recipe. It's delicious and easy, frugal, yet fancy, and everyone loves it. Better yet, it has a vague, confusing history and completely preposterous name. This not-French recipe hails from the Rochester area of New York State, where it's a staple on virtually every Italian-American restaurant menu.

Cook Time 10 minutes

Yield 4 servings

Number Of Ingredients 15

4 eggs
2 tablespoons milk
1 cup all-purpose flour
1 tablespoon salt
1 teaspoon ground black pepper
1 pinch cayenne pepper
1?½ pounds skinless, boneless chicken breast cutlets, pounded flat
2 tablespoons olive oil
1 tablespoon butter
1 cup vegetable broth
½ cup dry sherry
2 lemons, juiced
¼ cup cold butter, cut into chunks
1 tablespoon chopped fresh flat-leaf parsley
salt and ground black pepper to taste

Steps:

  • Beat eggs and milk together in a shallow bowl. Whisk flour, salt, black pepper, and cayenne pepper together in another shallow bowl.
  • Gently press chicken into flour mixture to coat; shake off excess flour. Dip into egg mixture and coat completely.
  • Heat olive oil and 1 tablespoon butter together in a large skillet over medium heat. Cook chicken in hot oil until lightly browned, 2 to 3 minutes per side. Transfer chicken to a plate.
  • Cook and stir vegetable broth, sherry, and lemon juice in the same skillet; bring to a boil and cook until sauce is reduced by half. Remove from heat and add cold butter chunks; stir until butter is melted and sauce is shiny and thickened, 1 to 2 minutes. Stir parsley into sauce and season with salt and pepper.
  • Return chicken to the skillet over medium heat, spoon sauce over the top, and cook until chicken is heated through and no longer pink in the center, 1 to 3 minutes more.

RECIPES AND COOKING GUIDES FROM THE NEW YORK TIMES - NYT COOKING - TURKEY BREAST ROULADE WITH GARLIC AND ROSEMARY RECIPE - NYT COOKING
Ina Garten has been known as the Barefoot Contessa since she opened a gourmet store by that name in East Hampton, N.Y., in 1985. She shared this recipe from her book “Modern Comfort Food” with The Times for Thanksgiving in 2020, when many cooks were looking for alternatives to whole turkey. If you don’t like fennel seeds, leave them out: Garlic, sage and rosemary give this roast the flavors of Italian porchetta, and it will still be fragrant, juicy and delicious without them.
