SEARED TUNA STEAK | JAMIE OLIVER FISH & SEAFOOD RECIPE

Seared tuna steak | Jamie Oliver fish & seafood recipe image

When buying tuna you should look for meat that is evenly coloured, dark red and has a fine, tight grain free of large sinews. Generally you get better tuna in good fishmongers than in supermarkets, but sometimes the supermarkets get a good batch in, so keep your eyes peeled. There is a bit of a thing about it being fashionable to serve tuna pink; if you buy good-quality fresh tuna the last thing you want to do is cook it all the way through and make it taste like tinned tuna, so yes, good-quality fresh tuna should be served rare or very pink.

Total Time 15 minutes

Yield 4

Number Of Ingredients 8

1 small dried red chilli
1 tablespoon coriander seeds
½ a clove of garlic
1 good handful of fresh basil
1 good handful of fresh coriander
olive oil
1 lemon
4 x 225 g tuna steaks ideally 2cm thick, from sustainable sources

Steps:

    1. Smash up the chilli and the coriander seeds in a pestle and mortar.
    2. Peel and chop the garlic, pick and finely chop the herb leaves and add it all to the pestle and mortar with a drizzle of oil and lemon juice, to taste. Mix together, and season with sea salt and black pepper.
    3. Lay out your tuna steaks on a tray, season both sides and rub all over with the herb mixture.
    4. There are two nice ways to cook it: I prefer to cook it on a griddle pan or in a frying pan.
    5. Your pan should be very, very hot. Put in the tuna and what you want to do is sear it so that it toasts, fries and browns (about 45 to 60 seconds on each side).
    6. Once cooked, I like to rip the steaks in half and serve with salad and chips or boiled potatoes and a big wedge of lemon. It’s quite sexy sometimes with some marinated sun-dried tomatoes, olives, basil… The possibilities are endless.

POTATO AND PEA CURRY RECIPE - BBC FOOD

Potato and pea curry recipe - BBC Food image

Aloo dum is a potato and pea curry which is possibly the most common vegetable curry in India. It’s almost like chips with everything here, aloo dum with everything there. It’s either easy to make or hard, depending on what you want to do with it. If I was describing it to somebody I’d just say boil potatoes, fry them with garam masala, add some tomato, chilli, turmeric and salt and it’s done; then, if you like, throw in frozen peas just before the end. This meal, if served as 8 portions, provides 223kcal, 4g protein, 28g carbohydrate (of which 4g sugars), 10g fat (of which 1.5g saturates), 4g fibre and 0.4g salt per portion.

Provided by Rick Stein

Prep Time 30 minutes

Cook Time 1 hours

Yield Serves 6-8

Number Of Ingredients 20

1kg/2lb 4oz potatoes, peeled and cut into 3cm/1¼oz chunks
4 tbsp vegetable oil
1 tsp ground turmeric
3 tbsp vegetable oil
2 Indian bay leaves
¼ tsp asafoetida
1 medium onion, very finely chopped
6 garlic cloves, finely crushed
5cm/2in fresh root ginger, finely grated
1 tsp Kashmiri chilli powder
1 tsp ground cumin
1 tsp ground coriander
½ tsp amchur (dried mango powder)
½ tsp ground turmeric
½ tsp salt
200g/7oz tomato passata
2 green chillies, sliced lengthways into thin strips, with or without seeds according to preference
150g/5½oz frozen peas
1 tsp garam masala
handful chopped coriander leaves, to finish

Steps:

  • Boil the potatoes in a pan of salted water for eight minutes until just tender, then drain well. Heat the oil in a heavy-based saucepan or karahi over a medium-high heat, add the potatoes and fry over a high heat for 5 minutes, or until just starting to colour. Add the turmeric and fry for 30 seconds. Remove from the heat.
  • For the sauce, heat the oil in another pan over a medium-high heat. Add the bay leaves and fry for one minute, then add the asafoetida and stir. Add the onion and fry for five minutes; then add the garlic and ginger and fry for five minutes, or until softened and lightly golden-brown.
  • Add the chilli powder, cumin, coriander, amchur, turmeric and salt and fry for one minute, then add the tomato passata, green chillies and 100ml/3½fl oz water and stir together. Add the fried potatoes, reduce the heat to medium, cover the pan and cook for 10 minutes, adding a splash of water if anything catches on the bottom of the pan.
  • Add the peas and garam masala and cook uncovered for 3-4 minutes, or until the peas are cooked. Garnish with fresh coriander and serve.

EASY TAHINI RECIPE – BETTER THAN STORE ... - INSPIRED TASTE
Making tahini at home is easy and much less expensive than buying from the store. We recommend looking for sesame seeds in bulk bins or at International, Asian, and Middle Eastern markets for the best deals. While tahini can be made from unhulled, sprouted and hulled sesame seeds, we prefer to use hulled sesame seeds for tahini. Tahini can be kept in the refrigerator for a month.
