KICKIN' VEGETARIAN COLLARD GREENS RECIPE | ALLRECIPES

Kickin' Vegetarian Collard Greens Recipe | Allrecipes image

Corn bread, black eyed peas, and collards are a New Year's Day tradition in the South - the corn bread represents gold, black-eyed peas coins, and collards match the green of US paper currency. Since leaving the South, where I grew up, for the Pacific NW, I've begun a tradition of hosting an open house-style brunch on New Year's day and this is my go-to recipe for this fun occasion.

EASY VEGETARIAN COLLARD GREENS RECIPE - FOOD.COM

Easy Vegetarian Collard Greens Recipe - Food.com image

This is a wonderful way to make delicious, tender, vegan collard greens. The smoked sweet paprika in these greens imparts a wonderful smoky flavor without the traditional but decidedly non-kosher and non-vegetarian smoked ham hock. Make sure the paprika you buy is smoked, as the regular kind won't give you that smoky flavor. Whatever you do, don't discard the pot liquor! It is full of the nutrients and flavor that have leached out of the greens during cooking, and makes a very full-bodied and rich broth you can use as a replacement for water when making rice (my favorite), as the base for soups or stews, or in any other savory dish that requires broth or water.

Total Time 1 hours 5 minutes

Prep Time 20 minutes

Cook Time 45 minutes

Yield 10 serving(s)

Number Of Ingredients 8

2 lbs collard greens
4 -5 garlic cloves, minced
1 large onion, chopped
3 cups vegetable stock
1 teaspoon salt (to taste)
1 teaspoon smoked sweet paprika
1/2 cup apple cider vinegar
hot sauce (optional) or red pepper flakes (optional)

Steps:

  • Wash greens well, submerging in a sink full of cold water to remove any dirt and grit. Drain well. Cut off the stems right where the leaf starts. Stack about 5-8 leaves on top of eachother, then roll lengthwise. Cut rolled up leaves into 1" slices widthwise. Repeat until all the greens are done, and add to a large pot.
  • Add all other ingredients. Cover and bring to a boil over high heat, then reduce heat to a simmer. Simmer for 45 minutes or until greens are extremely tender. Serve hot, using a slotted spoon to drain the liquid from the greens.

VEGAN COLLARD GREENS | FOOD & WINE
Collards are often cooked with a smoked ham hock to add a meaty, smoky flavor; this mildly spicy vegan collard greens recipe from Boricua Soul, a Puerto Rican–Southern restaurant in Durham, North Carolina, achieves the same depth of flavor with quality vegetable broth, adobo seasoning, and a hint of liquid smoke. Soak up the juices (potlikker) with cornbread, or drizzle over steamed rice.

VEGETARIAN SLOW-COOKER COLLARD GREENS RECIPE | SOUTHERN LIVING
If you are a fan of your slow cooker, then this is a recipe you will want to try. Cooking this classic Southern side in a slow cooker not only frees you up to prepare other dishes, it frees up valuable stovetop space, as well. The greens get very tender without cooking down into a mush in the 9-hour cook time. You can make this holiday favorite a week or two in advance and freeze in air-tight bags, or make collard greens a day or two in advance and refrigerate in the slow cooker insert (if you have room!). Let the insert stand at room temp for 30 minutes, then return to slow cooker to reheat. Do not reheat the cold insert straight from the fridge or it will crack. The convenience of prewashed and chopped greens, widely available in stores, makes this item ideal for cooking during the holidays. Washing and re-washing sandy greens can take a lot of time. This recipe is a nicely balanced sweet and sour slow-cooker greens dish. The greens maintain their texture, but are soft and palatable. The balance of sweet, savory, and hot is great for the greens and the resulting pot liquor is delicious. These Vegetarian Slow-Cooker Collard Greens will be a hit at your next holiday gathering. You can never have enough side dishes on Thanksgiving, and it will be refreshing for your family to see a veggie dish that's not covered in cut-up bits of bacon or ham (although we do have plenty of delicious recipes of that variety). Collard greens are a Southern staple at potlucks and holiday meals, so switch up your go-to recipe with this vegetarian variety that's got a host of flavor in every bite. These collard greens would be delicious served up with your favorite cornbread recipe.
