1 Onion (diced)
3 stalks Celery (diced)
2 cups Chicken Broth (Low sodium)
2 Eggs (lightly beaten)
2 teaspoons Poultry seasoning
½ teaspoons Salt
¼ teaspoons Pepper
4 cups Whole wheat bread
2 cups Turkey
½ cup Cranberries (fresh or frozen)

Steps:

  • Wash hands with soap and water.
  • Preheat oven to 350°F.
  • Finely chop onion and celery.
  • Put onion, celery, and 1 cup of chicken broth into a saucepan.
  • Bring broth to a boil, then reduce heat and simmer until vegetables are tender.
  • Remove from heat and stir in the remaining ingredients (eggs, seasoning, salt, pepper, bread cubes, turkey, and cranberries)
  • Spray a 2 quart casserole dish with cooking spray.
  • Spoon mixture into the prepared casserole dish and cover with aluminum foil.
  • Cook for 15 minutes then remove aluminum foil.
  • Continue cooking for 20-25 minutes, or until thermometer reaches 165°F

4 c. of leftover prepared stuffing, divided
4 c. of coarsely chopped leftover cooked turkey (about 1 pound)
0.75 c. of Hellmann's or Best Foods real mayonnaise, divided
0.25 c. of whole berry cranberry sauce
2 c. of leftover mashed potatoes
1.5 c. of shredded mozzarella cheese (about 6 oz)

Steps:

  • 1. Preheat oven to 375 degrees. Spray 8-inch baking dish with no-stick cooking spray. Spoon in 2 cups stuffing, then top with turkey.
  • 2. Combine 1/4 cup mayonnaise with cranberry sauce; evenly spread over turkey.
  • 3. Combine remaining 1/2 cup Mayonnaise, potatoes and cheese in large bowl. Evenly spread on turkey, then top with remaining 2 cups stuffing.
  • 4. Bake 40 minutes or until heated through. Let stand 10 minutes before serving. If desired, garnish with dried cranberries.
  • 5. Note: Also terrific with Hellmann's Light Mayonnaise.
