TURKEY CRANBERRY CASSEROLE – IN THE KITCHEN
All the flavors of Thanksgiving in a casserole.

Steps:
- Wash hands with soap and water.
- Preheat oven to 350°F.
- Finely chop onion and celery.
- Put onion, celery, and 1 cup of chicken broth into a saucepan.
- Bring broth to a boil, then reduce heat and simmer until vegetables are tender.
- Remove from heat and stir in the remaining ingredients (eggs, seasoning, salt, pepper, bread cubes, turkey, and cranberries)
- Spray a 2 quart casserole dish with cooking spray.
- Spoon mixture into the prepared casserole dish and cover with aluminum foil.
- Cook for 15 minutes then remove aluminum foil.
- Continue cooking for 20-25 minutes, or until thermometer reaches 165°F

- 1. Preheat oven to 375 degrees. Spray 8-inch baking dish with no-stick cooking spray. Spoon in 2 cups stuffing, then top with turkey.
- 2. Combine 1/4 cup mayonnaise with cranberry sauce; evenly spread over turkey.
- 3. Combine remaining 1/2 cup Mayonnaise, potatoes and cheese in large bowl. Evenly spread on turkey, then top with remaining 2 cups stuffing.
- 4. Bake 40 minutes or until heated through. Let stand 10 minutes before serving. If desired, garnish with dried cranberries.
- 5. Note: Also terrific with Hellmann's Light Mayonnaise.
