TUNA OR SALMON BURGERS RECIPE - NYT COOKING

These high-protein burgers are a great way to edge away from beef and still feel like you’re eating a burger. If you sear them quickly they’ll be nice and moist.

Yield 4 burgers

Number Of Ingredients 14

1 pound center-cut tuna fillet, dark meat and connective tissue trimmed away, or salmon fillet preferably wild, skin and small bones removed
1/4 cup finely minced shallot or green onion
2 tablespoons capers, drained, rinsed and coarsely chopped
2 teaspoons grated fresh ginger
1 tablespoon low-sodium soy sauce
Salt
freshly ground pepper to taste
1 tablespoon sesame oil
1 teaspoon Worcestershire sauce
2 tablespoons chopped cilantro
Olive oil for the griddle or pan
Lime wedges for garnish
Whole grain hamburger buns
condiments of your choice

Steps:

  • Mince the fish using a sharp knife. Do not use a food processor. Add the remaining ingredients (except the olive oil and lime wedges) and blend together with a spatula or spoon. Shape into 1/2-inch thick patties and refrigerate, if possible, for 1 hour.
  • Heat a heavy nonstick skillet or a griddle over medium-high heat. Brush with olive oil and turn the heat to medium. Sear the patties for 2 to 3 minutes on each side, depending on how cooked you want the interior to be. Serve on buns, if desired, with the condiments of your choice.

Salmon or Tuna Noodle Casserole | Just A Pinch Recipes image

This casserole came about when I didn't have any tuna but I did have some leftover salmon. What the heck .. let's toss it out there and see if it's any good. It's easy to make from items you probably already have in your pantry .. no special shopping required and there isn't much clean up at all. Serve with a side salad and/or crusty french bread, a glass of wine or tea and it's a full meal deal! Canned salmon will work in place of fresh. Be sure to drain and remove the bones. I made it a 2nd time with tuna and it was very well received.

Number Of Ingredients 20

2 tablespoon(s) bread crumbs - plain or seasoned
1/8 teaspoon(s) garlic powder
1/4 teaspoon(s) dill weed
1 tablespoon(s) melted butter
2 cup(s) cooked crumbled salmon - leftover is great or use a 14 oz can of your favorite salmon drained and remove bonesnes discarded)
1 can(s) condensed cream of mushroom or celery soup
2 tablespoon(s) finely diced celery
1/4 cup(s) wafer thin sliced carrots
1/4 cup(s) frozen baby peas
1-1/2 teaspoon(s) diced red onion - more if desired
2 cup(s) cooked al dente elbow macaroni
1/4 teaspoon(s) celery salt
1/2 teaspoon(s) dill weed
1/4 cup(s) shredded cheddar cheese
1/4 cup(s) shredded monterey jack cheese
1/2 cup(s) milk
1/4 cup(s) sour cream
- salt and pepper to taste
1/4 cup(s) shredded cheddar cheese

Steps:

  • Preheat oven to 375 F. Coat a 2 quart baking dish with cooking spray, set aside.
  • In small bowl combine bread crumbs, garlic powder, dill weed and melted butter and mix until crumbly. Set aside.
  • In a large bowl, remaining ingredients except for the last 1/4 cup shredded cheddar cheese. Stir together until well blended. Spoon into prepared baking dish.
  • Spread the last 1/4 shredded cheese over the top of the casserole.
  • Sprinkle the bread crumb mixture evenly over the top of the casserole. Bake covered at 375 for 20 minutes.
  • Remove cover and return to oven for approximately 12 minutes until cheese is melted and casserole is bubbly.
  • Remove from oven and sit for at least 5 minutes before serving.
  • NOTE: Add more seasonings than listed if you like them, add less or remove them if you don't like them. This recipe is not set in stone .. however ... I recommend you try it this way first and then adjust according to your individual tastes. If you make this recipe and choose to substitute chicken or pork for the salmon or if you add chocolate or hot chili peppers or Dr Pepper you will not be happy and it is not my fault you did not follow instructions so please do not leave negative feedback .. this is a fish dish.
