2 quarts
soy milk
Coagulant (choose one of the following)
2 tsp.
Terra Alba aka Gypsum (Calcium Sulphate) OR
1 tsp.
Nigari Flakes (Magnesium Chloride) OR
1/2 tsp.
Liquid Nigari (Magnesium Chloride)

Steps:

  • Boil the soy milk for 5 minutes and then let it cool to 160-175°F (70-80°C) degrees.
  • If you are making soy milk using a soy milk maker, there is no need to boil the milk again.
  • Dissolve the coagulant of your choice in a cup of warm water--do not let it set too long!
  • Mix the water and coagulant mixture into the hot soy milk. Gently stir the milk but do not over mix. Allow the mixture to sit undisturbed for 15-25 minutes.
  • While the mixture sits, small white curds will separate from amber colored liquid.
  • Once the process is complete, transfer the curds into a molding container lined with cheesecloth or a similar fabric. Fold the fabric over the curds and place a small weight on top to begin pressing out the liquid. Allow the mixture to be pressed by the weight for 20-30 minutes or until it holds together. Remove the block of tofu from the mold.
  • If you don't plan to consume the tofu the same day that you make it, store it in a container filled with cold water in the refrigerator. Change this soaking water daily until you consume your tofu.

1 cup soy beans
1500 ml water
3 g GDL ( , around 1 tablespoon (no sweeping))
sugar to taste
1 cup brown sugar
1 cup water
1 thumb piece ginger ( , peeled and shredded )
1 tsp. chili oil
1 tsp. light soy sauce
1 tbsp. chopped Zhai Cai
1 tbsp. ginger and garlic water
chopped scallion and coriander to taste
1 tbsp. cooking oil
50g pork belly
1 thumb ginger ( , cut into small shreds)
1 clove garlic (, shredded )
10 hydrated wood ear mushroom ( , cut into small shreds )
2 fresh shiitake mushroom ( , cut into slices)
4 oyster mushrooms ( , thinly sliced and then shredded )
2 cups water
2 tbsp. light soy sauce
1 tbsp. dark soy sauce
1 tbsp. cornstarch ( , whisked with 2 tablespoons of water)
salt and pepper to taste
1 egg
salt if necessary ( , note 1)

MAKE YOUR OWN TOFU! | THE PERENNIAL PLATE
You will be left with solids (in the strainer) and liquid in the bowl. For the purpose of making tofu, you dont need the solids (also known as Okara)… but keep them on hand for a number of other uses in other recipes. Put the liquid into a pot and simmer for 10 minutes. In a separate bowl, mix together 3 teaspoons of gypsum with a cup of water.
