Make these cheesy monster-faced mini pizzas – baked using pepperoni, olives and bell pepper. Perfect Halloween dinner ready in 25 minutes!

6 English muffins, split
1 cup pizza sauce (from 14-oz jar)
1 teaspoon dried oregano leaves
1 package (3 oz) sliced pepperoni
1 cup shredded mozzarella cheese (4 oz)
24 ripe olive slices
1 red bell pepper, cut into 18 thin strips

Steps:

  • Heat oven to 400°F. Place English muffins, cut sides up, on ungreased cookie sheet. Spread pizza sauce over muffins; sprinkle with oregano. Top evenly with pepperoni and cheese.
  • Arrange 2 olive slices on each muffin half to look like eyes. Cut 6 bell pepper strips in half crosswise; place on muffin halves to look like nose. Add remaining bell pepper strips for mouths.
  • Bake 10 to 15 minutes or until lightly browned and cheese is melted.

This quick and easy sauce tastes like that which you would find at your neighborhood pizzeria! I found the original recipe on the Internet, but adapted it to my families taste.

Number Of Ingredients 11

2 tablespoons olive oil
3 cloves garlic, pressed
1 (6 ounce) can tomato paste
2/3 cup water
2 teaspoons sugar
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
3 tablespoons parmesan cheese
2 tablespoons red wine
salt
pepper

Steps:

  • In a medium saucepan, sauté garlic in oil until golden.
  • Add tomato paste, water, sugar, oregano, basil, cheese and wine.
  • Season with salt and pepper, to taste.
  • Simmer for 10 minutes over medium low heat.

Top the dough with ? tsp (0.5 mL) of the seasoning and place the pan on the stovetop. Cook over high heat for 2–3 minutes, or until the dough slightly puffs.Remove the pan from the heat and top with 12 pepperoni slices, then both cheeses, making sure to cover the entire pizza, including the edges, with the cheese. Top with the remaining seasoning. Use a spoon to dollop the pizza sauce onto the dough. Add the remaining pepperoni slices and bake for 15 minutes on the bottom rack of the oven.

We make them in the summer when the growers show up with pattypan squashes. What else are you supposed to do with those little squashes other than admire them? The stuffed vegetables are awesome with a mâche salad and partner perfectly with a nice rosé or pastis. Get the smallest vegetables you can find, about the size of a gold ball.
