SWISS CHEESE SALAD RECIPE: HOW TO MAKE IT
I entered this recipe that I created myself in a local cooking contest in 1980 - it took first prize! The salad complements any main dish and is also good for picnics or potlucks...just take the lettuce along in a plastic bag or container and toss with the cheese and vegetable mixture when you arrive.

- In a small bowl, combine onions, celery, green pepper and olives. In another bowl, whisk together oil, vinegar, mustard, salt and pepper. Pour over vegetables and refrigerate several hours or overnight., Just before serving, place lettuce in a large salad bowl; add the cheese and dressing with vegetables. Toss lightly.

- Heat oven to 325°F. Squeeze juice of orange into 9-in. square metal pan. Stir in vinegar, red pepper flakes, 1/2 cup water, and 1 tbsp. oil. Add squeezed orange halves, garlic halves, and thyme to pan, then beets. Cover tightly with foil and bake until beets are tender, 55 to 60 min. Remove foil and, using paper towel, carefully peel beets (reserve cooking liquid). Cut beets into 1-in.-thick wedges. Meanwhile, heat remaining 2 tbsp. oil in large skillet on medium. - Preheat oven to 350 degrees F. Line sheet pan with parchment paper and 7 slices bacon (don't overlap). Bake until crispy, about 20 to 25 minutes, then chop into bite-size pieces and set aside. Meanwhile, in a large skillet over medium heat, cook remaining slice bacon until crisp, about 5 minutes. Add garlic and shallot and cook until softened, 2 to 3 minutes.
