½ cup finely chopped sweet onion

3 tablespoons sugar
2 tablespoons coarse-grained mustard
1 teaspoon kosher salt
¼ teaspoon ground cumin
? teaspoon ground red pepper
½ cup canola oil

Steps:

Whisk together first 7 ingredients. Gradually add oil in a slow, steady stream, whisking constantly until smooth. Cover and chill 30 minutes or until ready to serve.

2 tablespoons apple cider vinegar
1?½ tablespoons honey
2 tablespoons finely chopped sweet onion
2 teaspoons coarse-grain mustard
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ cup olive oil
4 hard-cooked eggs, peeled
8 cups mixed greens
1?½ cups grape tomatoes, halved
4 slices bacon, cooked and chopped

Steps:

Dressing: In a small bowl combine apple cider vinegar, honey, onion, mustard, salt and pepper. Slowly whisk in oil. Set aside.
Salad: Finely grate or chop 2 eggs; slice remaining 2 eggs. In a large salad bowl, combine greens, tomatoes, bacon and grated eggs. Toss with dressing to coat and garnish with remaining egg slices. Serve immediately.
