Yield 2-3 dozen

Number Of Ingredients 10

1 cup dark brown sugar, packed
1 cup butter (2 sticks) or 1 cup margarine, softened to room temperature (2 sticks)
1 large egg
1/2 teaspoon ground cinnamon
2 1/2 cups flour
1/3 cup baking cocoa
1/2 teaspoon baking soda
1 cup filberts, toasted and ground (hazelnuts)
1 cup white chocolate chips
2 teaspoons shortening

Steps:

  • In large mixing bowl, beat brown sugar and butter until creamy, about 2 minutes.
  • Add egg and cinnamon; beat until light and fluffy.
  • Add flour, cocoa and baking soda, beating on low speed to combine.
  • Mix in ground nuts. Dough will be somewhat stiff.
  • Shape dough into 2 flat rounds; cover with plastic wrap and chill for at least 1 hour.
  • On surface dusted lightly with flour, roll out 1 round at a time to 1/8-inch thickness. The dough may be a bit stiff at first and crack a bit. That's ok keep at it, they will be fine :).
  • With cookie cutter, cut out football shapes.
  • Place 1 inch apart on cookie sheets coated with cooking spray or parchment paper.
  • Using a knife, mark laces on 1/2 of the footballs. These will be the "tops".
  • Bake at 350 degrees F. for 10 to 12 minutes or until tops are no longer moist.
  • Remove from cookie sheets and place on wire racks to cool.
  • Place white chocolate chips and shortening in a microwave safe dish; microwave on 50 percent power for 3 to 4 minutes, stirring every 30-45 seconds until the chips are melted.
  • Fill pastry bag fitted with a tip to achieve a thin line with white chocolate mixture. Pipe melted white chocolate onto the back of an unmarked cookie; top with a cookie with laces marked on it to make a sandwich. Decorate the top by piping on additional melted white chocolate to resemble laces on football.
  • Repeat with remaining cookies.
  • Makes 2 to 3 dozen cookies, depending on size of cutter.
  • I recommend doubling the white chocolate mixture so you can be a bit more generous with the filling. I make 1 batch per round of cookie dough.

Everyone loves these at Super Bowl parties. A couple years ago I brought them to the Orlando Brewing Company's party and two enormous platters were completely finished. You can buy the colored M&M's at http://shop.mms.com or at M&M's World in Orlando, Las Vegas or New York. I make two batches, one for each team's colors. These could be considered "good" treats for people avoiding bad carbs since they have oatmeal instead of white flour, but "healthy" may be a stretch!

Yield 50 cookies

Number Of Ingredients 11

1 cup brown sugar
1 cup sugar
1/2 cup butter, softened in microwave
3 eggs
1 teaspoon vanilla
1 teaspoon light corn syrup
1 1/2 cups peanut butter
2 teaspoons baking soda
4 cups oatmeal
1/2 cup chocolate chips
6 ounces M&M's plain chocolate candy, in team colors

Steps:

  • Mix all ingredients in a food processor or mixer, except for chocolate chips and M&M's which could get crushed; stir in the chocolate chips by hand.
  • Drop by tablespoons on an ungreased cookie sheet (I use a scoop which makes it so easy); then press 4-6 M&M's on the top of each cookie.
  • Bake at 350 degrees for 12-15 minutes or until just starting to turn brown; cool for 5-10 minutes before removing from cookie sheet to avoid breakage.

  • Cream butter and sugars together in a mixer. Add eggs and vanilla, making sure to scrape down the sides of the mixing bowl. Add flour, salt, baking soda and baking powder and mix on low until everything is incorporated.Chill the dough in the refrigerate for 2 hours. Preheat oven to 350ºF. Scoop out 2 tablespoon scoops of dough, and roll it into a ball. It should be about the size of a golf ball.Roll the ball of dough around in some M&Ms, making sure the M&Ms stick into the dough, and place the cookie on a parchment-lined baking sheet. Place 7-9 cookies on a sheet since they will spread due to their size.Bake for 14–15 minutes until just golden around the edges. Remove from oven and let rest on the baking sheet. The middle might look a little under-baked but let them rest on the baking sheet for 5 minutes to harden up and then they will be perfect!!
