Roasted Pepitas are the perfect healthy snack! These homemade roasted pepitas are packed with 7g of protein per serving, flavor and crunch! (Gluten-free)

Number Of Ingredients 3

4 Ounces Raw Pepitas (about 1 cup)
2 Teaspoons Olive Oil
½ - 1 Teaspoon Chili Lime Seasoning (like low sodium Tajín; recommend seasoning per taste)

Steps:

  • Preheat oven to 350ºF.
  • In a large bowl, mix pepitas, olive oil and seasoning. Toss to coat evenly. (Note: my chili lime seasoning contains salt. If yours does not, add ½ teaspoon per 1 cup of raw pepitas).
  • Empty seasoned pepitas onto a parchment lined baking tray.
  • Add into the oven for 12-15 minutes. Stir halfway through.
  • When time is done (pepitas will be golden brown), remove from the oven and let cool slightly.
  • Transfer into airtight container.
  • Pepitas last 1 week at room temperature in airtight container.

We’ve gutted the pumpkin, roasted and pureed it, and we’ve even made some delicious, creamy “pumpkin butter”.

1 whole Pumpkin, Gutted
Olive Oil
Table Salt
Any Seasonings You Want, Such As Cayenne, Curry Powder, Etc. (optional)

Steps:

  • As you gut the pumpkins, keep all the seeds—and guts—in a bowl.Throw them into a colander and rinse them under cold water, pulling away the chunks of pulp as you go.Spread the rinsed seeds out on a baking sheet.Allow the seeds to dry several hours or overnight. And beware: they’re quite sticky/slimy, so don’t place them on paper towels! Just leave ‘em on the baking sheet and they’ll be fine.When they’re nice and dry, go ahead and preheat the oven to 250 degrees.Begin by drizzling the seeds with a couple teaspoons of olive oil.Use your fingers to toss the seeds around to coat.Then salt and season the seeds to taste.Pop ‘em in the oven for an hour or so, until the seeds are light golden brown.Let them cool for a few minutes…then let the snacking begin!Pepitas need to be stored in an airtight container if they last beyond the first day.

If you don't have pepitas you can substitute: As a snack you can use whole pumpkin seeds (with hulls on). OR - Use sunflower seeds whole as a snack or with shell removed use them as a topping for salads or soups. OR - Use pine nuts (best toasted) as a snack or to top your salad greens or a soup.

Dec 06, 2010 · I’d go with pine nuts (which are super expensive right now, so maybe not) or unsalted pistachios. The recipe doesn’t specify if the pepitas should be hulled or not, but you could also consider toasting up the seeds from any winter squash (butternut, acorn, etc.) and using those.
