Best Steak & Eggs Recipe - How To Make Steak & Eggs image

Number Of Ingredients 10

1 1"-thick New York strip steak (about 13 oz.)
2 tbsp. vegetable oil, divided
1 tsp. Kosher salt, plus more for seasoning to taste
1 tsp. Freshly ground black pepper, plus more for seasoning to taste
3/4 tsp. smoked paprika, plus more for seasoning to taste
2 tbsp. butter
4 eggs
Roasted potatoes, for serving
Parsley, for serving
Dill, for serving

Steps:

  • Remove steak from refrigerator and let come to room temperature, 30 minutes. 
  • Rub steak with 1 tablespoon vegetable oil and season all over with 1 ½ teaspoon salt, 1 teaspoon pepper, and ¾ teaspoon paprika.
  • Heat a medium cast iron skillet over medium-high heat. Add steak and cook, flipping once, until a deep golden crust begins to form on both sides of the steak, about 5 minutes total. 
  • Reduce heat to medium-low and add butter to pan. Using a kitchen towel, carefully grip the skillet handle and tilt towards you so that the melting butter forms a pool at the bottom of the skillet. Using a spoon, continually baste butter onto steak to form a deeper golden crust. Flip steak and repeat, 2 to 3 minutes in total. Using a meat thermometer, check for doneness: 120-125°F  for medium rare, 130°F for medium. 
  • Transfer steak onto a cutting board and let rest about 10 minutes. 
  • Meanwhile, heat remaining oil in a nonstick skillet over medium heat until shimmering. Crack egg into pan and cook 3 to 4 minutes, or until white is set and edges are just beginning to brown. Remove from pan and season with salt and pepper.
  • Slice steak into 1" strips on a bias, against the grain. 
  • Serve steak with eggs and potatoes. Garnish with herbs and season with more salt, pepper, and paprika to taste.

20 g baby spinach
75 g quality cooked ham
70 g ripe cherry tomatoes
1 sprig of fresh basil
50 g smoked salmon
a few fresh chives
50 g chestnut mushrooms
a few drops of truffle oil

Steps:

    1. Preheat the oven to full whack. Lightly grease 2 ovenproof ramekins or small baking dishes with a little oil.
    2. Prepare your chosen filling – roughly chop the spinach, quarter the tomatoes, finely chop the chives or slice the mushrooms.
    3. Place your chosen filling into the prepared ramekins, crack a couple of eggs on top and season with salt and pepper.
    4. Place in the hot oven for 8 to 10 minutes, or until the whites are set but the yolks are still runny, then serve straight away.

    1. For a basic omelette, crack the eggs into a mixing bowl with a pinch of sea salt and black pepper. Beat well with a fork.
    2. Heat a small knob of butter in a small frying pan on a low heat, and once melted and bubbling, add the eggs and move the pan around to spread them out evenly.
    3. When the omelette begins to cook and firm up, but still has a little raw egg on top, sprinkle over the cheese (if using). I sometimes grate mine directly on to the omelette.
    4. Using a spatula, ease around the edges of the omelette, then fold it over in half. When it starts to turn golden brown underneath, remove the pan from the heat and slide the omelette on to a plate.
    5. For a tomato and basil omelette, pick and roughly tear the basil leaves. Chop the tomatoes in half, then add to a hot frying pan with a small knob of butter, a drizzle of oil and a pinch of salt and pepper. Fry and toss around for 1 minute, then turn the heat down to medium and sprinkle over the basil leaves. Add the eggs and move the pan around to spread them out evenly. Continue as for the basic omelette.
    6. For a mushroom omelette, quarter or roughly chop the mushrooms and add to a hot frying pan with a small knob of butter, a drizzle of oil and a pinch of salt and pepper. Fry and toss around until golden, then turn the heat down to medium. Add the eggs and move the pan around to spread them out evenly. When the omelette begins to cook and firm up, but still has a little raw egg on top, sprinkle over the Cheddar. Continue as for the basic omelette.
