2 nasi pears (I removed the skin (is optional))
30 g white fungus
10-12 red dates (seeded and cut into half)
1200 ml water
80-100 g rock honey sugar or rock sugar

Steps:

  • Soak the snow fungus in water till it becomes soft, about 20 minutes. Snip off and discard the yellow hard part on the under side of the snow fungus. Cut up the snow fungus into small pieces.
  • Rinse pears, cored and cut into wedges.
  • Place snow fungus, pears and red dates into a pot of water and bring to boil. Then simmer at lower heat for 30 minutes. Add rock sugar to taste and stir through until sugar dissolved.

Healthy Chinese style snow fungus soup with red dates and wolfberries

dried snow fungus ( ,25g (around 3/4 head, remove the yellow end)
9 red dates
1 tbsp. wolfberries ( ,??)
50 g to 80g rock sugar
1.5 L water ( ,fore high pressure cooker or 2L for regular cooker)

Steps:

  • Soak snow fungus firstly until soft. Then move the yellow end. Hand shred into small chunks.
  • Prepare a high pressure cooker, place the sow fungus pieces in, add red dates and rock sugar. then add enough clean water. For high pressure cooker, press soup. For regular pot, continue cooking at least 40 minutes after the the liquid boils.
  • Add wolfberries and continue cook for 5 to 10 minutes.
  • Serve either warm or chilled.
