CAJUN SMOKED TURKEY RECIPE | ZATARAIN'S

Cajun Smoked Turkey Recipe | Zatarain's image

Fire up the smoker and grab a jar of Zatarain’s® Cajun Injector Creole Butter Marinade. Injected directly into your bird, it quickly creates a buttery heat and moist, juicy meat that perfectly complement the smoke. Sprinkle turkey with Zatarain’s® Creole Seasoning before cooking for an extra hit of authentic New Orleans flavor.

Provided by Zatarain's

Prep Time 20 minutes

Cook Time 9 hours 30 minutes

Yield 12

Number Of Ingredients 5

1 whole turkey (12 to 14 pounds), fresh or frozen, thawed
1 jar (16 oz) Creole Butter Injectable Marinade
1/4 cup oil
2 tbsps Creole Seasoning
Oak wood chips

Steps:

  • Remove turkey from packaging and remove the neck, giblets, etc. from the cavity. Rinse turkey thoroughly and pat dry. Place in large pan.
  • Attach needle to Injector by turning clockwise until snug. DO NOT OVER TIGHTEN NEEDLE. Pour Marinade into separate container and draw into injector. Inject marinade at points 1 to 2 inches apart in the turkey.
  • Tie turkey legs together and brush all over with oil. Season turkey evenly with Creole Seasoning.
  • Set smoker temperature to 225°F. Remove turkey from pan and place in smoker.
  • Place desired amount of wood chips in smoker, making sure no chips remain in the chute after loading. Once the chips start to smoke, begin timing the smoking process. Smoke turkey about 35 to 40 minutes per pound (about 7 to 9 1/2 hours for a 12- to 14-pound turkey).
  • After the first hour of smoking, check wing and leg segments for browning. Cover turkey with foil halfway through smoking if browning too quickly. Turkey is done when juices run clear when thigh is pierced with a fork and internal temperature reaches 165°F in the breast and 175°F in the thigh. (Do not let the thermometer touch the bone.) Remove turkey from smoker and place on platter or carving board. Let stand 15 minutes before slicing.

Total Time 5 hours 0 minutes

Prep Time 30 minutes

Cook Time 4 hours 0 minutes

Yield 6 servings

Number Of Ingredients 12

6 turkey legs
3 tablespoons Worcestershire sauce
1 tablespoon vegetable oil
Dry Rub, recipe follows
Mop, recipe follows
Your favorite BBQ sauce, as needed, (recommended: North of the Border Chipotle BBQ Sauce)
1/4 cup chipotle seasoning, (recommended: North of the Border Chipotle Seasoning)
1 to 2 tablespoons mild dried ground red chili or paprika
1 tablespoon packed brown sugar
1 cup white vinegar
1 tablespoon BBQ sauce, (recommended: North of the Border Chipotle Barbecue Sauce)
1 tablespoon vegetable oil

Steps:

  • Several hours before planning on barbecuing, loosen the skin on the turkey legs by running your fingers under it as far as possible without tearing the skin.
  • Combine the Worcestershire sauce and the oil. Coat your fingers with the mixture and rub really well into the turkey legs, getting as much as you can under the skin. Sprinkle the Dry Rub over the skin, liberally rubbing into the turkey legs and under the skin. Place the legs in plastic bags and refrigerate.
  • Prepare the smoker for barbecuing, bringing the temperature to 200 to 220 degrees F. Remove the turkey legs from the refrigerator and let them sit at room temperature for about 30 minutes.
  • Re-warm the mop mixture over low heat.
  • Transfer the turkey legs to the smoker. Cook until the legs are very tender and the juices run clear, about 3 1/2 to 4 hours. Mop the legs at 45-minute intervals in a wood-burning pit, or as appropriate for your style of smoker. Serve the legs hot, to be eaten with your fingers, with a side of barbecue sauce.
  • Mix ingredients together in a small bowl.
  • Combine the mop ingredients in a small saucepan and warm the mixture over low heat.
