We'll show you how easy it is to slice it for frying, or to use it as seasoning in lots of your favorite beans and greens side dishes.

Prep Time 10 minutes

Cook Time 15 minutes

Yield Varies, according to beginning weight.

Number Of Ingredients 1

1 lb. Hog Jowl, smoked and cured

Steps:

  • Using a sharp knife, slice the jowl into desired thickness strips, like bacon.
  • Part of the jowl can be cut into hunks for seasoning of beans and greens.
  • Wrap any sections for freezing in plastic wrap, then aluminum foil.
  • Place wrapped sections in a Ziplock type bag and place in freezer for use later.
  • Heat a skillet to just below Medium heat on your stove top.
  • Place the slices of jowl in the warm skillet.
  • Turn jowl slices as needed, to prevent burning, and cook until fat is translucent and browned.
  • Remove from pan, place on paper towels and drain.
  • Save remaining grease from skillet by placing in a container and storing in refrigerator.
  • Use leftover grease just as you would any type of bacon grease for seasoning and cooking.
  • Serve the cooked hog jowl slices while warm.
  • Enjoy!

HOPPIN' JOHN RECIPE - NYT COOKING

Hoppin' John Recipe - NYT Cooking image

Provided by Matt Lee And Ted Lee

Total Time 1 hours 30 minutes

Yield 6 servings

Number Of Ingredients 9

1 cup dried black-eyed peas or field peas
2 tablespoons olive oil
1 smoked hog jowl, or 1/4 pound (3 strips) thick-cut smoked bacon
1 medium onion, coarsely chopped
1/2 teaspoon ground black pepper
1 teaspoon crushed red pepper flakes
1 teaspoon salt
5 or 6 peeled whole tomatoes, or half a 28-ounce can, drained (optional)
1 1/2 cups uncooked rice

Steps:

  • Wash the peas in a strainer, and soak them for 4 hours in ample fresh water. When ready, heat olive oil over medium-high heat in a 4-quart pot, and brown the hog jowl on both sides. (If using bacon, omit the olive oil, and simply render the fat in the pot for 5 minutes.) Add onion, and cook until softened, about 5 minutes. Add 6 cups water, black pepper, red pepper and salt, and bring to a boil.
  • Let mixture boil 10 minutes, and then add peas. Maintain a low boil, uncovered, until peas are nearly tender (25 minutes for black-eyed peas, 30 minutes for field peas). In a bowl, lightly crush tomatoes, and add to pot. Add rice to pot, reduce heat to low and simmer, covered, 20 minutes.
  • Turn off flame, and allow hoppin' John to steam in pot, lid on, for 5 minutes. If using hog jowl, remove from pot, and shred meat. Fluff hoppin' John, and add shredded jowl. Serve.

BLACK-EYED PEAS WITH HAM HOCK AND COLLARDS - NYT COOKING
For the New Year’s good fortune, a plate of black-eyed peas or other beans is considered auspicious, auguring wealth and prosperity. In the American South, they are traditionally eaten on the first day of the year. Adding cooked greens (the color of money) is said to make them even luckier. Simmered with onion and a meaty ham bone (other options are salt pork, bacon, pig’s feet, hog jowl and ham hock), black-eyed peas are often seasoned quite simply, with just salt and pepper. They may also be made highly seasoned with hot pepper and spices. Freshly baked cornbread is the perfect accompaniment.
