At the root of this treat is plenty of penny-wise practicality. "I first started making the 'logs' after I saw some chocolate-dipped pretzels at a shop," explains Mary Biebl of St. Paul, Minnesota. "They sure were appealing—but the price was outrageous. So I came up with my own version. - In a microwave, melt candy coating; stir until smooth. Pour into an ungreased 8-in. square pan or a tall glass. Roll or dip pretzels in coating, leaving 1 in. of space on the end you are holding; allow excess to drip off. Place on waxed paper-lined baking sheets; let stand until set. , In a microwave, melt chocolate chips; stir until smooth. Pour into a small resealable plastic bag. Carefully cut a very small hole in the bottom corner of the bag. Pipe stripe markings across the pretzel rods to resemble birch trees. Allow to set. Store in an airtight container.

Steps:
- Heat oven to 350°F.
- Combine butter, sugar and egg in large bowl. Beat at medium speed until creamy. Add all remaining cookie ingredients. Beat until well mixed. (Mixture will be crumbly.)
- Divide mixture into 8 equal portions. Roll each portion into 12-inch rope on lightly floured surface. Cut rope into 2-inch logs. Place 1 inch apart onto ungreased cookie sheets. Bake 11-15 minutes or until edges are light golden brown. Remove from cookie sheets. Cool 15 minutes.
- Place candy coating in small microwave-safe bowl. Microwave 1 minute; stir. Continue microwaving, stirring every 15 seconds, until melted and smooth. Frost tops and sides of logs; place onto waxed paper. Let stand until set.
- Place chocolate chips and oil in small microwave-safe bowl. Microwave 1 minute, stirring after 30 seconds, until melted and smooth. Dip fork into melted chocolate, drizzling chocolate crosswise over logs. Let stand until set.

- Preheat oven to 350°. Line a jelly roll pan with parchment paper and grease with cooking spray. In a medium bowl mix together flour, cocoa powder, and salt. In a large bowl beat egg yolks until thick. Slowly add ½ cup sugar and beat until pale then beat in flour mixture. In another large bowl beat egg whites until soft peaks form. Add remaining ¼ cup sugar a little at a time and continue to beat until stiff peaks form. Gently fold egg whites into batter in two batches. Pour batter into prepared pan and spread into an even layer. Bake until top springs back when lightly pressed, 12 minutes. Dust a clean kitchen towel with powdered sugar and invert warm cake onto towel. Peel off parchment paper. Starting at the short end, use the towel to tightly roll cake into a log. Let cool completely. Make filling: if using gelatin, place 2 tablespoons cold water in a shallow microwave-safe bowl and sprinkle gelatin in an even layer on top. Let bloom for 5 to 10 minutes, then microwave for 10 seconds until gelatin is runny—do not overheat! In a large bowl, beat together heavy cream, powdered sugar, pure vanilla extract, and a pinch of salt, until medium peaks form. If using gelatin, strain and stream into whipped cream at this point while continuing to beat the cream. Refrigerate until ready to use. When cake is cool, unroll and spread filling evenly over cake. Roll cake back into a log, using the towel to help create a tight roll. Place seam side down on a baking sheet and refrigerate until well chilled, 1 hour. Make frosting: In a large bowl beat butter until smooth. Add powdered sugar and cocoa powder and beat until no lumps remain then beat in vanilla, heavy cream, and salt. When ready to serve, trim ends and frost cake with chocolate buttercream. Dust lightly with powdered sugar and top with chocolate curls. Place cranberries and rosemary on log to create mistletoe.
