Beef Stroganoff Soup - The Pioneer Woman – Recipes ... image

This recipe came about because of a mediocre, overpriced steak dinner. Let me explain.

Number Of Ingredients 12

5 tbsp. Butter, Divided
1 lb. Beef Steak (Sirloin Is Great), Thinly Sliced (See Note)
1 Small Onion, Finely Chopped
8 oz. weight Baby Portobello Mushrooms, Thinly Sliced
2 tbsp. All-purpose Flour
3 c. Beef Broth
2 c. Heavy Cream
1 tbsp. Worcestershire Sauce
Salt And Pepper, to taste
6 oz. weight Egg Noodles
1 c. Sour Cream
1/4 c. Finely Chopped Parsley

Steps:

  • Heat a soup pot over medium heat. Melt 2 tablespoons butter in the pot and add beef. Season to taste with salt and pepper. Cook, stirring frequently, just until steak is browned. Remove to a plate along with the juices. Melt remaining butter in the now-empty pot. Add onion and cook until beginning to soften, about 5 minutes. Add mushrooms and cook until tender, about 5 more minutes. Season with salt and pepper to taste. Sprinkle in flour and cook for 2 minutes. Whisk in beef broth and cream. Bring to a boil. Add Worcestershire sauce and season to taste with salt and pepper.Add noodles and cook for the length of time recommended on the package, or until cooked to your preferred firmness. Remove from heat. Stir in beef (along with the juices), sour cream, and parsley. Taste once more to adjust seasoning and serve.Notes:• It's easiest to slice beef thinly when it's still somewhat frozen but not rock-hard.• You can substitute ground beef for the steak if you prefer. If you do make that substitution, you can brown the meat "dry" in the pan and leave out the extra 2 tablespoons of butter.

8 ounces beef bones
1/3 pound carrots, coarsely chopped 
1/3 pound celery, coarsely chopped 
1/3 pound yellow onion, coarsely chopped 
1 ounce instant au jus powder or 5 beef bouillon cubes, crushed 
1/2 teaspoon granulated garlic 
2 pounds beef roast, inside round or top round 
8 cups beef stock 
3 1/2 cups all-purpose flour, plus for dusting
1 teaspoon salt 
2 eggs 
4 egg yolks 
2 teaspoons oil 
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • For the broth: Place the beef bones in a large roasting pan and roast in the oven for 3 hours. Add the carrots, celery and onions, and roast 1 hour longer.
  • Mix the au jus powder with the granulated garlic and 1 teaspoon water to make a heavy paste. Coat the beef roast thoroughly. Cover the roast with foil and cook along with the bones for 1 hour. Remove the foil and cook 30 minutes longer. Allow to rest for 15 minutes.
  • Place the bones and roasted vegetables in a stockpot with the beef stock. Simmer for 1 hour. Strain the bones and vegetables and discard, and then return the liquid to the pot.
  • Cut the beef into 3/4-inch cubes. Add to the liquid and simmer for 30 minutes.
  • For the noodles: In a large mixing bowl, stir together the 3 cups of the flour and the salt.
  • In another bowl, combine 2/3 cup water, the eggs, yolks and oil. Mix, and then add to the dry ingredients.
  • Knead the dough until it is smooth and elastic, 8 to 10 minutes. Add the remaining 1/2 cup flour, as needed. Cover with a towel and let rest for 10 minutes. Divide the dough in half on a lightly floured surface. Roll each half into a 12-by-12-inch square, about 1/16 inch thick. Cut into 2- to 3-inch-long strips. Toss the noodles with some flour to separate.
  • Add the noodles to the beef broth and simmer for 30 minutes. Season with salt and pepper to taste.

Remove pan from heat and transfer beef and veggie mixture to an 8x8 baking dish.Preheat oven to 425ºF.To make the mashed potatoes, place cubed potatoes in a pot filled with cold water. Place on the stove set over high heat and bring to a boil. Cook for about 5 minutes, until potato cubes are fork-tender. Drain potatoes, then spread them out on a sheet pan in a single layer and let sit for a couple minutes so the steam can escape. Use a fork or potato masher to mash the potatoes, then stir in cream, milk, butter, and cheese. Make any necessary seasoning adjustments with salt and pepper. Spread mashed potatoes on top of the beef and veggies in the 8x8 baking dish.Bake shepherd’s pie for 20–25 minutes, until mashed potatoes are golden brown and crispy on top. Serve and enjoy!Freezer Instructions: After baking, let pan cool to room temperature, then cover tightly with foil and place in the freezer for up to 2 months. When ready to eat, reheat the shepherd's pie (still covered with the foil) for 1 hour in a 350ºF oven. If you thaw the pie in the fridge the night before, you can cut that time in half.
