- Preheat oven to 350 degrees F (175 degrees C).
- Cook the chorizo in a skillet over medium heat until crumbled and evenly browned, about 5 minutes; drain and set aside. Cook the onion in the same skillet until soft; stir in the eggs and scramble with the onion. Mix in the tomatoes and continue to cook and stir until eggs are nearly set; remove from heat.
- Spread a layer of tortilla chips into a 9x13 baking dish. Scatter the chorizo and the scrambled egg mixture over the chips. Top with jalapeno slices and cover with the cheese.
- Bake in preheated oven until cheese is melted, 7 to 10 minutes.

- Heat turkey sausage in the microwave according to package directions; keep warm.
- Coat a medium nonstick skillet with cooking spray. Heat the skillet over medium-high heat. Add the egg whites and cook for 1 minute or until egg whites are set, stirring occasionally.
- To assemble, arrange chips on two individual luncheon plates. Top with warm eggs, warm turkey, and cheese. Microwave on 100% power (high) for 20 to 30 seconds or until cheese just melts. Serve topped with tomatoes. If desired, sprinkle with cilantro.

- Preheat broiler. Line a baking sheet with aluminum foil and lightly brush with oil or spray with cooking spray. Arrange onion, peppers, and garlic in a single layer, and broil for 5 to 10 minutes or until peppers and onions are softened and starting to blister (if the peppers are cooking quicker than the onions, you may want to remove them from the baking sheet and cook the onions a little bit longer).Transfer onions, peppers and garlic to a blender along with canned tomatoes.
