1 pound bulk chorizo sausage
½ onion, chopped
5 eggs, beaten
4 tomatoes, chopped
2 jalapeno peppers, sliced
1 (8 ounce) package tortilla chips
1 (8 ounce) package finely shredded Mexican blend cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook the chorizo in a skillet over medium heat until crumbled and evenly browned, about 5 minutes; drain and set aside. Cook the onion in the same skillet until soft; stir in the eggs and scramble with the onion. Mix in the tomatoes and continue to cook and stir until eggs are nearly set; remove from heat.
  • Spread a layer of tortilla chips into a 9x13 baking dish. Scatter the chorizo and the scrambled egg mixture over the chips. Top with jalapeno slices and cover with the cheese.
  • Bake in preheated oven until cheese is melted, 7 to 10 minutes.

? cup refrigerated fully cooked crumbled turkey sausage, such as Jimmy Dean brand
Nonstick cooking spray
? cup refrigerated egg whites, such as Egg Beaters brand
2 ounces no-salt-added blue corn tortilla chips (about 24 chips), such as Garden of Eatin' brand
¼ cup reduced-fat shredded sharp cheddar cheese, such as Sargento brand
8 cherry tomatoes, quartered
Snipped fresh cilantro

Steps:

  • Heat turkey sausage in the microwave according to package directions; keep warm.
  • Coat a medium nonstick skillet with cooking spray. Heat the skillet over medium-high heat. Add the egg whites and cook for 1 minute or until egg whites are set, stirring occasionally.
  • To assemble, arrange chips on two individual luncheon plates. Top with warm eggs, warm turkey, and cheese. Microwave on 100% power (high) for 20 to 30 seconds or until cheese just melts. Serve topped with tomatoes. If desired, sprinkle with cilantro.

Let cook for 30 seconds, then start scraping the bottom of the pan with a spatula, flipping the cooked pieces of egg so the uncooked parts come in contact with the pan. Continue scraping and flipping for another 1-2 minutes, breaking up any large pieces of egg, until just cooked through.Remove skillet from oven and spoon scrambled eggs over top. Scatter jalapeño and radish slices over top, sprinkle with cilantro, and finish with a generous dollop of sour cream in the middle. Serve immediately.
