2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup butter, melted
1 egg white, slightly beaten
1 (15 1/2 ounce) package brownie mix
1/3 cup vegetable oil
1 large egg
3 tablespoons water
24 Hershey chocolate kisses, unwrapped
24 marshmallows

Steps:

  • Preheat oven to 350 deg.
  • In a small bowl, combine cracker crumbs and sugar. Add melted butter and egg white, stirring to combine.
  • Press mixture on bottom and half way up the sides of 2 mini muffins pans.
  • Bake for 3 minutes. Set aside.
  • In a medium bowl combine brownie mix, vegetable oil, egg and water; stir to combine well. Evenly divide into prepared crusts. Bake for 30 minutes.
  • Press chocolate pieces, pointy side down into center of each brownie; bake for 2 minutes Remove from oven.
  • Preheat broiler.
  • Place one marshmallow horizontally on top of each brownie. Broil for 2 to 3 minutes, or until golden brown. Remove from pans.

1 cup graham cracker crumbs
3 tablespoons sugar
1/3 cup butter, melted
1/3 cup chocolate chips
2 tablespoons butter
1 jar (7 oz) marshmallow creme

Steps:

  • Heat oven to 375°F. Place mini paper baking cup in each of 36 mini muffin cups.
  • In small bowl, mix graham cracker crumbs, sugar and 1/3 cup melted butter. Spoon 1 tablespoon mixture into each cup; press into cup with back of spoon.
  • Bake 7 minutes. Cool in pan 15 minutes, then remove cups to cooling rack.
  • In microwavable bowl, microwave chocolate chips and 2 tablespoons butter uncovered on High 1 minute, stirring every 30 seconds. If not melted, stir and reheat in 10-second intervals until melted.
  • Using a small cookie scoop, place a scoopful of marshmallow creme into each cup. Drizzle with melted chocolate mixture. Serve immediately, or refrigerate until serving.

  • In a medium saucepan, melt butter over medium heat. Stir in marshmallows and cook, stirring, until smooth, 2 minutes; remove from heat. In a bowl, combine marshmallows with cereal; mix well. In the bottom of a 9" x 13" pan, spread half of cereal mixture into a thin, even layer. Top with warmed chocolate. Place graham crackers in a single layer over chocolate, breaking crackers as needed to fit; top with crème. I wanted s'mores one evening and I didn't want to build a fire. This is one of my now favorite recipes. It takes a little more time but it's not messy and great for little kids. Don't have to worry about cleaning their hands, might have to clean around their mouth though, if you have one of those children that could make a mess out of absolutely nothing. I was one of those children and still am today.
