We fell in love with these easy-to-make crab balls. Super moist and tasty, they are similar to a crab cake, in flavor and texture, but baked instead of fried. Add a squirt of fresh lemon juice and melted butter and you have a lovely appetizer or entree.

Ingredients

1 pound(s) Backfin crab meat
1 - egg, beaten
1 cup(s) crushed Ritz crackers
1 teaspoon(s) yellow mustard
2 tablespoon(s) fresh lemon juice
2 tablespoon(s) parsley
1 teaspoon(s) Old Bay seasoning
1 tablespoon(s) Worcestershire sauce

Steps:

Place crab meat in a mixing bowl and pick out any stray shell fragments.
Add crushed crackers, Old Bay seasoning, and parsley to the crab.
In a separate bowl, combine egg, mustard, lemon juice, and Worcestershire sauce. Whip with a whisk until smooth.
Pour egg mixture over the crab meat and crackers. Gently mix, careful not to break up large lumps of crab meat.
Mold into golfball-sized balls and place on a cookie sheet.
Bake at 350 degrees for 30 minutes.
Drizzle with melted butter and allow to cool. Serve with saltine crackers. Enjoy delicious baked crab balls!

Ingredients

40 Ritz™ crackers
1 cup butter
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla
1 bag (11.5 oz) milk chocolate chips (2 cups)
1 tablespoon Betty Crocker™ candy sprinkles

Steps:

Heat oven to 350°F. Line 15x10x1-inch pan with foil. Spray foil with cooking spray. Place crackers in single layer in pan.
In 2-quart saucepan, cook and stir butter, sugar and salt over medium heat until butter is melted. Heat to boiling, stirring frequently. Boil 7 to 9 minutes longer, stirring frequently, until light brown color. Remove from heat. Add vanilla; stir until blended. Immediately pour mixture evenly over crackers in pan; spread to cover.
Bake 13 to 15 minutes or until bubbly and brown in color. Sprinkle chocolate chips on top of cracker mixture. Let stand 5 minutes. Spread chocolate evenly over cracker mixture. Sprinkle with candy sprinkles. Cool completely, about 2 hours or until chocolate is set. Break into pieces. Store covered in refrigerator up to 1 week.
