BEEF TENDERLOIN WITH SHALLOT AND RED WINE REDUCTION ...

Beef Tenderloin with Shallot and Red Wine Reduction ... image

The tenderloin is both the most tender and the most expensive cut of beef. It is also leaner than many other cuts, which means it needs relatively brief cooking and tastes best when cooked to no more than medium-rare. The red wine reduction, made from the flavorful pan juices, is quickly assembled while the roast rests.

Looking for more holiday inspiration? Total Time 45 minutes

Prep Time 20 minutes

Cook Time 25 minutes

Yield 8 servings

Number Of Ingredients 8

1 beef tenderloin, 2 1/2 to 3 lb.
2 Tbs. extra-virgin olive oil
2 tsp. minced fresh thyme
1 1/2 tsp. salt
1 tsp. freshly ground pepper
2 Tbs. minced shallots
1 cup full-bodied red wine, such as Syrah or Cabernet Sauvignon
2 1/2 Tbs. unsalted butter
Steps:

  • Let the beef tenderloin stand at room temperature for about 1 hour before roasting.
  • Preheat an oven to 450°F.
  • Rub the tenderloin all over with the olive oil, then rub with the thyme, salt and pepper.
  • Place the tenderloin on a V-shaped rack in a shallow roasting pan just large enough to accommodate it. Roast until an instant-read thermometer inserted into the thickest part of the meat registers 125°F for very rare to rare, about 20 minutes; 130°F for medium-rare, about 25 minutes; or 135°F for medium, about 30 minutes.
  • Transfer the tenderloin to a carving board, cover loosely with aluminum foil and let rest for about 15 minutes.
  • Meanwhile, remove the rack from the roasting pan and place the pan on the stovetop over medium heat. Add the shallots and sauté, stirring them into the pan juices, until translucent, about 2 minutes. Add the wine, a little at a time, stirring with a wooden spoon to scrape up the browned bits from the pan bottom. Cook until the wine is reduced by nearly half. Stir in the butter. When the butter has melted, remove the sauce from the heat and cover to keep warm.
  • Cut the tenderloin across the grain into slices 1/2 inch thick. Arrange the slices on a platter, drizzle with the sauce and serve immediately. Serves 8.

RIB ROAST WITH RED WINE DEMI-GLACE AND ROASTED WHITE ...

Rib Roast with Red Wine Demi-Glace and Roasted White ... image

Provided by Robert Irvine : Food Network

Categories main-dish

Total Time 2 hours 30 minutes

Prep Time 30 minutes

Cook Time 2 hours 0 minutes

Yield 6 servings

Number Of Ingredients 17

2 tablespoons finely chopped garlic
2 tablespoons finely chopped shallots
Salt
Freshly ground black pepper
1 cup canola oil (approximately)
1 (5 pound) beef rib roast, with bones
1/4 cup butter
1 small onion finely chopped
1/4 cup all-purpose flour
1/2 cup red wine
2 cups veal stock
3 pounds potatoes with skin on, cut into quarters
2 tablespoons salt
1 tablespoon freshly ground black pepper
2 tablespoons chopped fresh thyme leaves
2 tablespoons chopped fresh rosemary leaves
2 bunches asparagus, tough ends removed

Steps:

  • Preheat an oven to 350 degrees F.
  • In a small bowl, make a paste with garlic, shallots, salt, pepper and enough of the canola oil to bind the paste (about 1/4 cup). Place the beef in a roasting pan and rub paste onto meat. Roast in oven for about 1 1/2 hours, or until an instant-read thermometer registers an internal temperature of 120 degrees F. (Arrange the oven racks so you will have room for the potatoes and asparagus to follow.)
  • While roast is in oven, prepare demi-glace by melting the butter over medium heat in a medium saucepan and sauteing the onion until tender. Whisk in flour with a fork to make a roux, then add red wine and veal stock. Let simmer over medium heat for about 1 hour, until reduced by 1/3, stirring occasionally. In a large bowl, coat potatoes with about 1/2 cup of the remaining canola oil and toss with salt, pepper, fresh thyme, and fresh rosemary.
  • When the roast has been cooking for about 1 hour, place the potatoes in a baking pan and put into the oven. Place the asparagus in a single layer on another baking pan. When the potatoes have been roasting for 30 minutes, drain the oil and herbs from the potatoes and pour over the asparagus. Remove the roast, if done, and allow to rest for about 15 minutes. Return the potatoes to the oven, along with the asparagus. Roast the vegetables until tender, about another 15 minutes while the rib roast is resting. To finish the demi-glace, whisk butter into the warm reduction until combined. Slice the rib roast and arrange on a large platter. Arrange the potatoes and asparagus around the meat, drizzling demi-glace sauce on the meat.

A CHEAT'S BORDELAISE SAUCE RECIPE - NYT COOKING
Classic bordelaise sauce, which can transform shoe leather into strip steak, is made with veal stock, demi-glace and time -- a lot of time. Here, though, you’ll use pan drippings from pork chops, simmering them with a red wine reduction until the two combine into an unctuous, rich sauce that flanks the old methods. Strain the whole thing, stir in a little butter and seasonings, and drizzle it over the pork chops. This takes most of a bottle of pinot noir, so choose the one you won’t mind finishing off in the kitchen yourself, alone with your heat and creativity.

  • Add the pan drippings from the chops or the demi-glace if you have it. Simmer for an additional 5 to 10 minutes and then strain into a clean saucepan. Return to medium heat until warm and whisk in the butter and season with salt and pepper to taste. Serve immediately drizzled over the pork chops.

PAN-SEARED FILET MIGNON WITH RED WINE AND BALSAMIC SAUCE ...
Jul 05, 2018 · Red Wine Reduction For Steak. My secret to cooking filet mignon in a red wine and balsamic reduction is the thickness of the sauce. Too thin and it lacks any sort of consistency.
