This is posted by request, and comes from the Aus Women's Weekly Chinese Cooking Class Cookbook. It's a simple recipe I make quite often. Prep time doesn't include marinating time.

Number Of Ingredients 9

2 (375 g) lean pork fillets
1/4 cup soy sauce
2 tablespoons dry red wine
1 tablespoon honey
1 tablespoon brown sugar
2 teaspoons red food coloring
1 garlic clove
1 shallot
1/2 teaspoon Chinese five spice powder

Steps:

  • Combine soy sauce, red wine, honey, sugar, food colouring, crushed garlic and halved shallot in a large bowl.
  • Sprinkle cinnamon on top, add pork, marinate one hour or cover and refrigerate overnight for best results, turning occasionally.
  • Drain pork fillets from marinade, reserve marinade.
  • Put pork on wire rack over baking dish.
  • Bake in a moderate oven 30 minutes, turning frequently with tongs and basting frequently with marinade.
  • Remove from oven, put on board and allow to cool.
  • Cut pork into diagonal slices to serve.

Red lees has always been the raw material for Chinese people in the south of the Yangtze River to prepare red lees meat, red lees eel, red lees chicken, Su-style sauced duck, red lees egg and red lees kimchi. The alcohol content is about 20%, and the quality is based on the next year's aging. Bright red in color and strong wine aroma is better. It has special functions such as lowering cholesterol, lowering blood pressure, lowering blood sugar and preventing cancer. It also has rare and valuable natural red pigments. Barbecued pork was cooked at home before, and this time it was marinated with red yeast rice lees. Not only did the char siu have a nice color, but also the meat had a slight aroma of lees! It's really good!

500 g Plum meat
50 grams Barbecued Pork Sauce
20 grams Red yeast rice lees
2 scoops Oyster sauce
a little salt
Right amount honey
a little Minced garlic
Half a spoon Ginger juice
2 scoops Soy sauce

Steps:

  • Wash the plum meat
  • Soak up the water and put in an appropriate amount of red yeast rice distiller’s grains
  • Add salt, ginger juice, light soy sauce, barbecued pork sauce, oyster sauce, honey, minced garlic
  • Stir evenly, it is best to massage it with your hands for a while, then put it in a fresh-keeping bag and keep it in the refrigerator for 24 hours
  • Take out the marinated pork and place it on the grill
  • Brush with honey water mixed with honey and water
  • Put it in the oven at 200 degrees and bake for 20 minutes
