Have you ever tried making pizza with a tortilla before? It's super easy and makes a great vegetarian lunch. Just pop it in the toaster oven until the cheese is melted and the edges of the tortilla are browned.

Ingredients

1 8-inch whole-wheat tortilla
1 teaspoon plus 1 tablespoon extra-virgin olive oil, divided
5 thin slices tomato
3 thin slices red onion
3 tablespoons shredded mozzarella cheese
1 tablespoon chopped fresh basil or 1 teaspoon dried
2 teaspoons balsamic vinegar
2 cups packed mixed salad greens

Steps:

Lay tortilla on a foil-lined toaster-oven pan. Brush 1 teaspoon oil over the tortilla. Top with tomato, onion and mozzarella. Toast until the cheese is melted and the tortilla is starting to crisp, 7 to 9 minutes. Remove from the oven and top with basil. Cut into wedges.
Drizzle the remaining 1 tablespoon oil and vinegar over the greens and serve with the pizza.

Ingredients

1 - french bread sandwich roll
4 tablespoon(s) preferred spaghetti or pizza sauce
20 slice(s) turkey pepperoni
- shredded mozarella cheese

Steps:

Warm toaster oven to 350 degrees. Slice sandwich roll, spread with 1 tbsp desired sauce on each.
Top with 5 slices of pepperoni and desired amount of cheese on each.
Toast until cheese is melted.
Assemble sandwich and enjoy. :)
