2 bunches Kale, Picked Over, Cleaned, And Torn Into Bite Sized Pieces
12 whole Red Potatoes, Sliced Thin
1 whole Onion, Chopped
1 1/2 lb. Italian Sausage
1/2 tsp. Red Pepper Flakes (more To Taste)
2 c. Low Sodium Chicken Broth
2 c. Whole Milk
4 c. Half-and-half
Splash Of Heavy Cream
Fresh Or Dried Oregano
Black Pepper To Taste

Steps:

  • Prepare the kale and set it aside. In a medium pot. boil sliced potatoes until tender. Drain and set aside. In a large pot, crumble and brown the Italian sausage. Drain as much as the fat as you can. Stir in the red pepper flakes, oregano, chicken broth, milk, and half-and-half. Simmer for 30 minutes.Give it a taste and adjust seasonings as needed. Add the potatoes, a splash of heavy cream for richness, then stir in the kale. Simmer an additional 10-15 minutes, then serve.

This reminds me of Zuppa Toscana. I used evaporated milk in place of the heavy cream and half and half, and I still absolutely loved this.

2 bunches kale (picked over, cleaned, and torn into bite sized pieces)
12 whole red potatoes, sliced thin
1 whole onion, chopped
1 1/2 lbs Italian sausage
2 cups low sodium chicken broth
4 cups half-and-half
splash heavy cream
oregano, to taste (fresh or dried)
black pepper, to taste

Steps:

  • Prepare the kale and set it aside.
  • In a medium pot, boil sliced potatoes until tender. Drain and set aside.
  • In a large pot, crumble and brown the Italian sausage. Drain as much of the fat as you can.
  • Stir in the red pepper flakes, oregano, chicken broth, milk, and half and half. Simmer for 30 minutes.
  • Give it a taste and adjust seasonings as needed.
  • Add the potatoes, a splash of heavy cream for richness, then stir in the kale. Simmer an additional 10 to 15 minutes, then serve.

  • Add bacon pieces to a soup pot over medium heat and cook bacon until crisp and fat is rendered. Remove the bacon from the pot and set it aside. Pour off most of the grease, but do not clean the pot. Return the hot to medium-high heat and add the onions, carrots, and celery. Stir and cook for 2 minutes or so, then add the diced potatoes. Cook for 5 minutes, seasoning with salt, pepper, and Cajun spice. Pour in the broth and bring it to a gentle boil. Cook for 10 minutes, or until the potatoes are starting to get tender. Whisk together the flour and the milk, then pour into the soup and allow the soup to cook for another 5 minutes. Remove half to 2/3 the soup and blend in batches in a blender/food process until completely smooth. (***USE CAUTION WHEN BLENDING HOT SOUP; IF POSSIBLE, ALLOW THE SOUP TO COOL BEFORE BLENDING***) Pour it back into the soup pot and stir to combine. Let it heat back up as you taste for seasonings, adding more of what it needs. Stir in cream, then stir in parsley, reserving a little for garnish. Serve in bowls garnished with parsley, grated cheese and crisp bacon pieces.

  • Preheat the oven to 350 degrees. Generously spray 18 muffin cups with nonstick cooking spray.In a large skillet over medium-high heat, crumble and cook the sausage until it’s about ¾ brown. Add the onion and reduce the heat to medium-low. Stir and continue cooking the sausage, stirring occasionally, until the sausage is cooked and the onion is soft. Remove this from the heat and set it aside to cool.Crack the eggs into a bowl and add the salt, pepper, and chili powder. Whisk it until it’s combined. Add the cheddar and bell pepper and stir them in. When the sausage has cooled slightly, Add it by the spoonful and stir it until it’s all mixed together.Use a measuring cup to scoop the mixture into the muffin cups and bake them for 20-22 minutes, until they’re puffy and just barely set. Within a minute or two, the casseroles will start to flatten just a little bit. This is normal! Run a knife along the edges of each muffin cup and lift them out of the pan. Serve them warm with a little fruit.Helpful tip: The casseroles freeze beautifully! Just seal them tightly in plastic zipper bags. Thaw and reheat in the microwave when you’re ready to serve them.Change it up!• Substitute half the diced bell pepper with finely chopped mushrooms.• Add several dashes of hot sauce to the egg mixture for a little more spice.• Substitute pepper jack cheese for the cheddar.

  • Preheat oven to 400ºF.Cut butternut squash in half lengthwise and scoop out seeds and stringy bits. Pour olive oil in the cavity of each squash half. Slice top off the heads of garlic. Place each one, cut side down, in one of the squash cavities. Place squash and garlic, cut side up, in a large rimmed roasting pan. Pour about 2 cups of water in the bottom of the pan. Bake in preheated oven until squash is fork tender, about 60–70 minutes. Remove from oven, pull garlic heads out of the squash, and allow to cool for a few minutes. Meanwhile, as squash is baking, brown and crumble sausage in a large soup pot. Remove to a plate.Bring a medium pot of water to a boil. Cook tortelloni according to package instructions. Remove with a slotted spoon to a plate.When squash has cooled a bit, scoop out the flesh into the now-empty soup pot. Squeeze out cloves of garlic into the pot as well. Add basil, oregano, thyme, and chicken broth. Heat until warm. Puree with a stick blender until completely smooth. Heat until nearly boiling. Add spinach, cover, and cook for 2 minutes. Remove from heat and add cream, sausage, and tortelloni. Give it a good stir. Taste and add salt and pepper if needed.Serve hot with freshly grated Parmesan cheese.
