Steps:
- Grease springform pans with butter.
- For the cakes, melt remaining butter in a small saucepan. Stir in sugar and 1 tablespoon juice from pineapple can and simmer for 1-2 minutes or until sugar is completely dissolved.
- Pour into pans. Sprinkle 2 pineapple rings per cake on one side with almonds and place almond side up in pans. Roll remaining pineapple rings in almonds and set aside.
- Mix flour with cornstarch, baking powder, baking soda and salt. Beat butter with sugar until creamy. Add eggs one by one, stirring until fluffy. Stir in flour mixture, alternating with sour cream. Pour 1/3 of the batter into pans over pineapple slices. Add more pineapple and pour on 1/3 of batter. Repeat, finishing with batter. Bake on the middle rack of a preheated oven at 180°C (approximately 350°F) for 40-50 minutes.
- For the syrup, boil sugar, juice and water until slightly thickened.
- Remove cakes from oven and cool for 10 minutes before flipping onto plates. Drizzle with syrup and cool. Serve.
