Steps:
- Preheat oven to 350. Grease a medium casserole dish with butter
- In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks. Stir until ingredients are well combined. Pour the mixture into the prepared casserole dish.
- In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice. Stire with a rubber spatula until evenly blended. spread crumb mixture over top of pineapple mixture.
- Bake 25-30 minutes, or until golden brown

Steps:
- Preheat oven to 350 degrees. Lightly spray a shallow 1-quart baking dish with cooking spray or rub with butter.
- Drain pineapple, reserving 1/4 cup juice. If there isn’t quite enough juice, just add OJ or water.
- Combine reserved juice and flour in a bowl then mix until smooth. Add sugar, drained pineapple and cheese then stir until combined. Gently stir in 1/2 cup cracker crumbles then spoon mixture into baking dish.
- Stir remaining cup of cracker crumbles with melted butter then spread evenly over pineapple mixture.
- Bake at 350 degrees for 20-30 minutes or until cheese is melted and crackers are starting to brown. Serve immediately.

- In a large bowl, stir together the crushed crackers, cheese and butter, then sprinkle the topping evenly over the pineapple. Bake the casserole until the topping is golden brown, the cheese is melted and the pineapple is bubbling in the center of the dish, 35 to 40 minutes. Let the casserole cool for 5 minutes, then serve warm.
