My take on pebre, the Chilean salsa. Mine uses a rehydrated aji pepper. This is delicious served with bread or alongside eggs, meats, fish, or cheese.

Number Of Ingredients 10

1 dried aji pepper, seeded
1 Roma tomato, quartered
1 small onion, peeled and quartered
½ cup fresh cilantro, stems removed
1 clove garlic, peeled
½ lime, juiced
2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
salt and pepper to taste
1 jalapeno pepper, sliced

Steps:

  • Cover aji pepper with hot water. Allow to soak for 15 minutes; drain.
  • Combine tomato, onion, and cilantro in a food processor fitted with a blade. Add garlic and pulse a few times. Add drained pepper, lime juice, red wine vinegar, and olive oil. Blend until desired consistency has been achieved. Season with salt and pepper.
  • Stir pebre to combine. Top with sliced jalapeno before serving.

Similar to Italian pesto or Argentinean chimichurri, this fresh herb sauce is a staple on Chilean tables. In addition to Pastel de Choclo, it pairs well with grilled meats and is good stirred into pasta or rice.

Yield 8 servings (serving size: 2 tablespoons)

Number Of Ingredients 10

2 cups fresh parsley leaves (about 1 bunch)
2 cups fresh cilantro leaves (about 1 bunch)
¾ cup chopped onion
¼ cup water
1 tablespoon fresh lemon juice
1 teaspoon hot pepper sauce or crushed red pepper
¾ teaspoon salt
¼ teaspoon black pepper
2 garlic cloves, minced
1?½ tablespoons extravirgin olive oil

Steps:

  • Combine first 9 ingredients in a food processor; pulse until minced, scraping sides occasionally. Place herb mixture in a bowl; cover and refrigerate 1 hour. Stir in oil before serving.
