2 1/2 c. icing sugar (625 ml)
2 c. chocolate cookie crumbs (500 ml)
1 c. butter, softened (250 ml)
1 c. flaked coconut (250 ml)
3/4 c. finely minced peanuts (175 ml)
1/2 c. smooth peanut butter (125 ml)
1/3 c. granulated sugar (75 ml)
2 Tbsp. rum (25 ml)
Granulated sugar, for rolling rum balls

Steps:

In large bowl, combine icing sugar, cookie crumbs, butter, coconut, peanuts, peanut butter, sugar and rum till well blended. Shape dough into 3/4-inch balls and roll into granulated sugar. Place in airtight container lined with waxed paper and chill. Makes about 4 dozen. So you thought rum balls couldn't have peanut butter in them, well you're wrong. These have tasty peanut butter and rum for a sweet treat all will remember. You can use graham wafer crumbs instead of the chocolate cookie crumbs for a lighter coloured rum ball. If you do not want to use rum, use 1 tbsp. of vanilla extract.

My mom helped me post this recipe. These candies are like Reese's Peanut Butter Cups and are fun for kids to make because you don't have to cook them. My mom and I made these together.

Ingredients

1 1/2 cups sifted powdered sugar
1/2 cup creamy peanut butter
3 tablespoons butter or 3 tablespoons margarine, softened
1 lb dipping chocolate or 1 lb confectioner's coating

Steps:

Stir together powdered sugar, peanut butter and butter until well mixed.
Shape peanut butter mixture into 1 inch balls, placing them on a baking sheet covered with waxed paper.
Let balls stand for 20 minutes until dry.
Melt the dipping chocolate or confectioners' coating.
Drop balls one at a time in melted chocolate.
Using a fork, remove from the chocolate, letting excess chocolate drip off.
Place back on the waxed paper.
Let stand until dry.
Store tightly covered in a cool dry place.
