Ingredients

1 pound confectioners' sugar
½ cup peanut butter
½ cup unsweetened cocoa powder
6 tablespoons milk
2 teaspoons vanilla extract

Steps:

Line a 8x8 inch square pan with wax paper.
Combine the confectioners' sugar, peanut butter, cocoa, milk and vanilla together and mix until smooth. Chill until firm then cut into squares.

1 cup butter, softened
3 cups sugar
6 large eggs, room temperature
1 teaspoon lemon extract
1 teaspoon vanilla extract
3 cups all-purpose flour
1 cup heavy whipping cream
Sliced fresh fruit, optional

Steps:

Preheat oven to 325°. Grease and flour two 9x5-in. loaf pans. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in extracts. Add flour alternately with cream, beating just until blended. Pour into prepared pans., Bake until a toothpick inserted in center comes out clean, 80-85 minutes. Cool 10 minutes before removing from pans to wire racks to cool completely. If desired, serve with fruit.

Bake until golden and a wooden pick or skewer inserted in middle of cake comes out with a few crumbs adhering, 1 to 1 1/4 hours. Cool cake in pan on a rack 30 minutes. Run a thin knife around inner and outer edges of cake, then invert rack over pan and invert cake onto rack to cool completely.

Just be aware that you might have the whole thing in one sitting! A friend had this served with peanut butter, but I'm sure this would be delicious served with any icing or spread, even whipped cream.
